Due to 50% spelt malt and 50% barley malt the result is a very digestible wholesome beer.

Bottle. Frothy white fair mostly deminishing head. Yellow colour. Moderate malty and light hoppy aroma. Light bitter flavor. Spelt present. Short moderate bitter finish. Watery palate. OK speltbier.

Süßer, leicht getreidiger Geruch. Sehr süßer Antrunk, das Bier erscheint mir CO2-arm. Im weiteren Verlauf sind die Aromen nur verhalten, das Ganze schmeckt etwas dickflüssig...ich weiß nicht wie ich es beschreiben soll. Wässrig, leicht herb,leicht getreidig. Sehr schön im Sommer bei den derzeitgen Höchsttemperaturen. Trotzdem hätte mehr Intensität in den Aromen nicht geschadet. Test vom 18.7.2006, Gebinde: Glasflasche Noten: 7,11,13,11,8,12 - 11,15

Bottle 330 ml
Aroma fresh hop with sweetness of malts. Over all bland and with out character.
Appearance fine haze on amber-gold. Medium white top with shorter lifespan. 3-
Flavor and Palate : medium light bodied with watery thin follow up. Slight grainy notes , slight tartness to it. Bland overly carbonated brew.

Bottle 33cl (Moulin des moines version). A cloudy amber beer. Aroma is sweet with some grainy body and a fruity orange body certainly from spelt, quite drinkable, hops character is very low, high yeast aroma. Not bad but nothing exceptional.

Dinkel oder dunkel?
0,33 l bottle, bought in a discount, Laaber, Bavaria.
Opalescent light amber with a small off white head. Straw and grains, malt in the aroma, some lurking fruits. This fruity character develops in the flavor but the grainy-malty character rules with some sourish lactic acid in the end.

Cloudy orange with a medium off white head. Aroma had overripe fruit, malt and hints of mold. Flavor came our sweet with mold, overripe fruit and malty hints. Finished sweet.

33 cL bottle. Pours hazy orange with a small white head. Aroma is flat malty and slight grassy. Cardboardish and toasted malty flavoured. Bitter and dry malty into a mild citric finish.

33 cL bottle. Pours slight hazy orange with a lacing white head. Mild malty and slight fruity aroma. Flavour is a bit dull malty/wheaty - as expected from spelt brews. Soft flavoured into a medium dry finish. Not bad, just not my liking.

Bottle 33 cl. Courtesy of Ungstrup.As: "Moulin des Moines Speltor". Pours a cloudy orangey golden with an off-white head. Odd, sweet chewy aroma. Medium body, sweet, strange and rather unusual flavours, there’s an edge of mildew in there also. A little dry in the finish. The label reminds me suspiciously of "Plankstetten Dinkel". 010910

(Bottle 33 cl) Dark yellow - almost curry coloured! - with a fine head. Very, very soft mouthfeel - almost a little flat, not at all fizzy and prickling as in a Hefe. Slighly tart with an underlying bitterness. A very quaffable brew. As Spelt is some sort of ancient wheat, I believe this really should be labelled a Hefe - albeit an untraditional one. 121001

Ungstrup (29850) - Citizen of the universe, DENMARK - SEP 1, 2010
Bottled. A hazy dark golden beer with a thick yellowish head. The aroma has notes of grain, straw, and malt. The flavor is very sweet with notes of brewmash and strong notes of malt as well as notes of wheat and sodapop, leading to a prickling hoppy finish.

The aroma is of sweet hoppy corn water. The color is an unclear orange brown and it has a small beige head. The flavor is sweet hoppy with notes of oil. The hops runs prickling over the tongue. The body is thin. All in all this is a boring beer.
