COMMERCIAL DESCRIPTION
Our Optimal Wit is brewed in the Belgian Wit Bier tradition. It is brewed with raw wheat and oats, and steeped with coriander, orange peel and grains of paradise. This ale is a pale golden color with a bit of cloudy haze from bottle conditioning. This unfiltered ale offers layers of complex, nuanced flavors that evolve in the glass. It finishes crisp and refreshes the palate.

Bottle with Patrick and Sean Thomas. Pours a pale, cloudy, piss yellow with virtually no head a couple spots of soapy lace. Nose of wheat, grain, coriander, lemon, sweet orange peel, light bubble gum. Lightish body, medium carbonation.

Tom opened a bottle and forced me to drink some with him and Shin Tommy. Pours hazy canary yellow with a white head which recedes to leave a flat surface. Aroma of wet oats, lemongrass, clove, and maybe chalk? It's gross. Taste is lemon and some honey, with a smooth, oatmeal finish. Not bad, but still gross to my palate. The looks average with a nice hazy golden straw color and passes some light through it, had a mild white ring of head and left no lacing on the glass. The beer smells average as it has a spicey, lemon scent but somewhat mildly. The beer tastes decent with a great start of lemon and corriander that gives away to mildly sweet orange finish, a nice blend that isnt overly sweet. The mouthfeel is average as the beer was carbonated okay and doesnt leave much else behind. Overall, an average White Ale that doesnt lack in taste nor blow you away either.

355ml bottle as a gift brought home from Virginia: Hazy, light, golden colour with a thin, white head that consists of tonnes of tiny bubbles and stays well for a minute or so. Spicy notes initially with some yeast and lemon coming through along with it. There is a strong smell of coriander that follows this and some bananas and orange peel. Strong wheat and yeast flavours with some banana and clove to kick things off with. There is hints of coriander in the taste too along with a bit of citrus lemon and some orange zest. Light medium with some spice and a citrus tang along with a relatively creamy and smooth taste, coupled with strong carbonation. Miles better than I was expecting and I knew it was going to be a nice beer before I tried it. All the usual suspects are there for the style but they come together great and the beer is a cracker.

Hazy straw yellow color with a short lived white head. Strong spicy nose with lots of orange peel. Nice light mouth feel. Coriander, bitter orange peel, white bread, lemon zest, and some cracker maltiness. Refreshing and flavorful.

Bottle. Nose with some lemon cleanser and super heavy coriander, pours hazy pale yellow-golden with a soapy bright white head. Light but creamy body, refreshing, and yes, it’s coriander soup. Lemon cleanser, only vaguely scratchy, getting mild but pleasant contributions from the grains of paradise. No bitterness, medium sweetness, actually has sufficiently dense malt for style. For summer beers, it’s definitely got a niche, and there’s some good craftsmanship here.

Draft. Pours hazy dark yellow with a thin white head. Tastes like creamy foamy wheat with hints of mild citrus. Medium body and very low carbonation. Smells like mild lemon and herbs.

Pours a bright hazy pale-orange. Nose is a little weak, but the right notes are there - coriander, orange, a little grass. Packs a bright orange-zest punch, quite sweet but not off-putting. Mellow coriander and grass taste as well, Belgian yeast is not on showcase by any means. Medium-bodied, a little too syrupy, carbonation is solid and finish is dry. Its 1,000,000 degrees outside so this beer is definitely killing it in the moment. That said, this beer is all oranges, if you want a little more yeast-funk try again.
