Our Optimal Wit is brewed in the Belgian Wit Bier tradition. It is brewed with raw wheat and oats, and steeped with coriander, orange peel and grains of paradise. This ale is a pale golden color with a bit of cloudy haze from bottle conditioning. This unfiltered ale offers layers of complex, nuanced flavors that evolve in the glass. It finishes crisp and refreshes the palate.

This was sampled at GABF 2015 in Denver. This rating is from my tasting notes and somehow I skipped over this Brewery. So while delayed here it is. In the the tasting glass was hazy yellow with a white foam cap. Hose of citrus and light coriander spice. Medium body. The flavor is citrus and the coriander is retrained which makes this a very easy drinking and quite delightful beer. Dry finish. I liked this one a lot.

Faint straw aroma. Body is sweet with sold Belgian mats and a bit of a metallic finish.

Bottle. Pours a hazy yellow body with a small fizzy white head that faded to a wispy covering. The nose is very spicy, really heavy on the coriander and orange peel, with some light wheat and yeastiness. The flavor is a bit overdone with the spice, there’s just a whole lot of coriander and orange peel going on in here. This is almost coming across like a shandy, there’s so much citrus-like flavor. Light bodied with fine fizzy carbonation. Meh, this would be decent if they ratcheted down on spice bill.

On tap at Chef Geoff’s Dulles Airport. Hazy yellow body with slight head. Hoppy and spicy nose. Taste of hops, crisp, floral, spicy. Lightly balanced. Enjoyable.

Bottle: Very pale, hazy yellow with a puffy white head. Sweet lemon, wheat, almost a banana aroma....... Taste is light....sweet lemon, wheat malt... Soft....decent flavour and a pleasant lightness.

Poured a cloudy yellowish color with aromas of light yeast, spice, pepper, coriander, light tangerine, and a touch of wheat. Flavors were a mixture of the aromas a basic wit beer, that didn’t go overboard with the coriander and yeast.
