Our Optimal Wit is brewed in the Belgian Wit Bier tradition. It is brewed with raw wheat and oats, and steeped with coriander, orange peel and grains of paradise. This ale is a pale golden color with a bit of cloudy haze from bottle conditioning. This unfiltered ale offers layers of complex, nuanced flavors that evolve in the glass. It finishes crisp and refreshes the palate.

Tap at Iron Horse. Very cloudy light orange pour with minuscule white head formation. Little lace. Fresher peach ice cream nose. Some peaches and cream character taken over by vanilla scented candle. Taste is soapy, buttery, blander with some soap cutting mild sweet butter and mild diacetyl. Big spice adjunct hides basic brewing flaws. Palate is thickish for style from the butter. 12oz bottle. Hazy orange-tan. Thin, fading head. Zesty orange-wheat aroma, even after some months in my closet. Really nails the style, yeasty and medium bodied. Refreshing, balanced, really well executed. The orange and spices are there, but they don’t overwhelm...i usually like the more yeast forward vanilla tones...this doesn’t really display that, but has the perfect mouthfeel for the style. Pretty solid, just shy of world class.

For those of you who think Wits have too much banana, this beer will have you singing a different tune altogether. If you are having company and want to bridge them into craft brews or are looking for a refreshing beer this is it. Had on tap in my shop in Wake Forest, NC.

Aroma: coriander, orange peel , wheat , hint of pepper , touch of clove , saffron? 7-
Appearance: hazed amber-gold with thin fizzy top. 2+
Flavor/Palate: medium light bodied. Clean , smooth medium feel. Gentle notes of orange peel, sugars with chewy textures of wheat. Drinkable , excellent choice for summer days.

After having a few samples while making a beer run I decided to visit. For $7 I got not only five samples of well crafted beers but another sampler glass to keep. Not bad for a brewery that I didn’t even know existed about two hours beforehand. My first sample, the Optimal Wit, was a refreshing session beer. I could see this being a good lawn mower beer.

Aroma / Appearance - A decent nose and golden clear body give this some presence. It won’t amaze you if you have seen the best of class; at the same time it also was not mailed in. A light scent of orange rinds and wheat provide some context for the taste profile.

Flavor / Palate - Sweet oranges followed by a fluid tartness give this good balance. Depending on the mood this would be ideal as a contrast to big heavy 8%+ ABV releases. Setting the tone for the samples to come this indicates the brewers here know what they are doing.

Hazy orange pour with a thin white head. Aroma is orange citrus, wit yeast, clove, bubblegum, banana. Really mice example of a wit.

A decent wit. Nothing special but well done. Aroma was sweet. Very grainy with corianer and light malt. Pour was a hazy light orange with lots of rising bubbles and a one finger white head. Taste was very sweet and spicy. Coriander dand orange peel are evident, with a dry tart aftertaste. Not very full flavored, but decent. Nice carbonation.

Shitty coriander aroma at first, not good. After letting it sits, it gets worse. After aerating briefly, it develops a vile burned popcorn odor.. Hazy amber, thin head. Flavor is coriander, light wheat malt. Finishes with popcorn. Just so you know, I despise popcorn. I never had a bad experience with it, that I can recall, but it makes me vomit.

Draft @ Rustico Restaurant, Alexandria, VA. Pours a hazy yellow color with a small white head. Has a fruity wheat malty hoppy citrus aroma. Fruity wheat malty spicy yeasty flavor with hoppy hints. Has a fruity spicy yeasty wheat malty finish.
