Our Optimal Wit is brewed in the Belgian Wit Bier tradition. It is brewed with raw wheat and oats, and steeped with coriander, orange peel and grains of paradise. This ale is a pale golden color with a bit of cloudy haze from bottle conditioning. This unfiltered ale offers layers of complex, nuanced flavors that evolve in the glass. It finishes crisp and refreshes the palate.

After having a few samples while making a beer run I decided to visit. For $7 I got not only five samples of well crafted beers but another sampler glass to keep. Not bad for a brewery that I didn’t even know existed about two hours beforehand. My first sample, the Optimal Wit, was a refreshing session beer. I could see this being a good lawn mower beer.

Aroma / Appearance - A decent nose and golden clear body give this some presence. It won’t amaze you if you have seen the best of class; at the same time it also was not mailed in. A light scent of orange rinds and wheat provide some context for the taste profile.

Flavor / Palate - Sweet oranges followed by a fluid tartness give this good balance. Depending on the mood this would be ideal as a contrast to big heavy 8%+ ABV releases. Setting the tone for the samples to come this indicates the brewers here know what they are doing.

Bleh. Very thin with offputting aroma and hops overwhelming the notes of wheat and (possibly) watery spice. Nice to see the effort though

Hazy orange pour with a thin white head. Aroma is orange citrus, wit yeast, clove, bubblegum, banana. Really mice example of a wit.

A decent wit. Nothing special but well done. Aroma was sweet. Very grainy with corianer and light malt. Pour was a hazy light orange with lots of rising bubbles and a one finger white head. Taste was very sweet and spicy. Coriander dand orange peel are evident, with a dry tart aftertaste. Not very full flavored, but decent. Nice carbonation.

Shitty coriander aroma at first, not good. After letting it sits, it gets worse. After aerating briefly, it develops a vile burned popcorn odor.. Hazy amber, thin head. Flavor is coriander, light wheat malt. Finishes with popcorn. Just so you know, I despise popcorn. I never had a bad experience with it, that I can recall, but it makes me vomit.

Draft @ Rustico Restaurant, Alexandria, VA. Pours a hazy yellow color with a small white head. Has a fruity wheat malty hoppy citrus aroma. Fruity wheat malty spicy yeasty flavor with hoppy hints. Has a fruity spicy yeasty wheat malty finish.

Pours a pale, lemony hay color with only a thin, wispy white head. The aroma has a subtle musty, yeasty character as expected for the style. The flavor is lightly fruity, with a faint banana character, which is contrasted by an earthy yeastiness. The texture is fizzy and light, which is fine with the light flavor profile but unexciting. Overall, this beer is light and pleasant, yet nicely flavored, making it a solid albeit unremarkable witbier.

Served on draft at Mellow Mushroom in Charlottesville, VA on 3/30/11. Pours a hazy lemon yellow color with a dense medium sized creamy white head. Good head retention and lacing. Aroma of wheat, quite a bit of citrus and a spicy finish. The taste is bready wheat malts and a spicy finish. Medium bodied.

I really enjoy this wit, perhaps because I can get it so fresh. Light and grassy, with some orange and fruit on the back. Finishes very clean for a wit, not sugary, and refreshing. Quality brew

12 oz bottle purchased at Total Wine, McLean, VA. pours a cloudy yellow with little to no head... would like to see 1-2 fingers for this style. lovely nose filled with Belgian yeast esters and lots of coriander and light spices. med body, slightly dry with lots of yeast character and lively spices. grain notes throughout. bright finish with citrus and light bread notes - could be more dry.
