COMMERCIAL DESCRIPTION
Our Optimal Wit is brewed in the Belgian Wit Bier tradition. It is brewed with raw wheat and oats, and steeped with coriander, orange peel and grains of paradise. This ale is a pale golden color with a bit of cloudy haze from bottle conditioning. This unfiltered ale offers layers of complex, nuanced flavors that evolve in the glass. It finishes crisp and refreshes the palate.

355ml bottle as a gift brought home from Virginia: Hazy, light, golden colour with a thin, white head that consists of tonnes of tiny bubbles and stays well for a minute or so. Spicy notes initially with some yeast and lemon coming through along with it. There is a strong smell of coriander that follows this and some bananas and orange peel. Strong wheat and yeast flavours with some banana and clove to kick things off with. There is hints of coriander in the taste too along with a bit of citrus lemon and some orange zest. Light medium with some spice and a citrus tang along with a relatively creamy and smooth taste, coupled with strong carbonation. Miles better than I was expecting and I knew it was going to be a nice beer before I tried it. All the usual suspects are there for the style but they come together great and the beer is a cracker.

Appearance: Perfect cloudy straw colored body, creamy white head.
Aroma: Orange and coriander, slightly spicy and slightly sweet, good for the style.
Taste: Balanced beautifully with the spice notes and citrus, very enjoyable.
Palate: Creamy medium body.
Overall: I donít know why this is rated so low, this is spot on for the style. Great brew.

On draught at McClellan- Washington. Pours a very dense pale straw color with a yellowish hue. Fine bubble white head and lace. Mild corriander aroma. Medium body with moderately effervescent mouthfeel. Not over carbonated. Impressive blend of light spices complement the mellow wheat flavor. Refreshing and not filling.

This traditionally styled wit beer hits all the right notes. Pours cloudy straw with a small white head. Lots of orangey citrus in the nose. Medium bodied, and full flavored with nice cracked wheat backbone. Finishes clean with a light airy fruitiness.

On tap at Churchkey. Served in a tumbled. Pour is a cloudy light orange color with a pretty decent amount of haze. White head with some pretty sticky lacing. Overall, a good start. Nose is creamy and full of rich wheat plus some orange zest, coriander, and slight spice. Nice and well-rounded without any taking the front. Taste is equally as good as the nose. Very pleasant wheat base with a touch of spice along with some nice citrus character. The mouthfeel really takes it away. Light body is enhanced by a nice wheat base and there is a touch of spice throughou along with a nice orange presence. Fairly light carbonation carries it through. Drinkabiliy is really nice. This is quite quaffable even after a 15-minute walk through the cold. Very glad to add the first beer for this place. Itís a good feeling to finally have a local brewery thatís actually in my town. Bottle. Hazy orange and yellow in color with a small white head. Aroma contains bubble gum, some spice, grains, and orange. Taste is more bubble gum, coriander, some citrus, and with a slightly bitter finish. Damn, that is really quite good. Light body and absolutely superb for a wit. I could drink this all day to be honest.

12oz bottle. Hazy orange-tan. Thin, fading head. Zesty orange-wheat aroma, even after some months in my closet. Really nails the style, yeasty and medium bodied. Refreshing, balanced, really well executed. The orange and spices are there, but they donít overwhelm...i usually like the more yeast forward vanilla tones...this doesnít really display that, but has the perfect mouthfeel for the style. Pretty solid, just shy of world class.
