COMMERCIAL DESCRIPTION
Our Optimal Wit is brewed in the Belgian Wit Bier tradition. It is brewed with raw wheat and oats, and steeped with coriander, orange peel and grains of paradise. This ale is a pale golden color with a bit of cloudy haze from bottle conditioning. This unfiltered ale offers layers of complex, nuanced flavors that evolve in the glass. It finishes crisp and refreshes the palate.

12oz Bottle. The pour was a cloudy medium yellow with a large (2-3 finger) white fizzy head that receded at a rather quick steady pace, and produced poor spotty lacing. The aroma was mild of a light grain malt and a musty Belgian yeast with notes of citrus (orange), coriander and a hint of pepper. The taste was lightly sweet and citrusy from the beginning, then progressed with a light spicy and mild funky yeast taste and a slight peppery ending. The flavor lasted an average duration after consumption, with a spicy yeast taste fading slowing into the background. Mouthfeel was light in body and watery in texture with a carbonation that was just beyond mild. Overall this was a very mild Witbier, both in taste and body. Although, it would make a great session beer on one of those intensely hot summer days...

Cloudy, yellow appearance with an average size white head and little lacing. Grassy, grainy, spicy aroma. Flavor tracks more toward the traditional wit style as the yeasty esters pair with wheat and spices. Slight vegetal aftertaste., Light bodied, well carbonated mouthfeel with a short lived finish.

Draught @ Albion. Hazy bright yellow with small foamy off-white head, citrus aroma, high carbonation, slightly sour citrusy taste with Belgian yeast flavor, thickish body, abrupt finish. Refreshin brew.

5 oz pour on draft at Barrel & Bushel, Tysons Corner Center. Hazy pale yellow with off-white head. Aromas of herbs, citrus, coriander. Tastes of light banana, herbs, citrus. Light body with a dry finish. Very solid wit, would definitely recommend this to someone as an alternative to the macro witbiers like Blue Moon.

This was sampled at GABF 2015 in Denver. This rating is from my tasting notes and somehow I skipped over this Brewery. So while delayed here it is. In the the tasting glass was hazy yellow with a white foam cap. Hose of citrus and light coriander spice. Medium body. The flavor is citrus and the coriander is retrained which makes this a very easy drinking and quite delightful beer. Dry finish. I liked this one a lot.
