Our Optimal Wit is brewed in the Belgian Wit Bier tradition. It is brewed with raw wheat and oats, and steeped with coriander, orange peel and grains of paradise. This ale is a pale golden color with a bit of cloudy haze from bottle conditioning. This unfiltered ale offers layers of complex, nuanced flavors that evolve in the glass. It finishes crisp and refreshes the palate.

12oz Bottle. The pour was a cloudy medium yellow with a large (2-3 finger) white fizzy head that receded at a rather quick steady pace, and produced poor spotty lacing. The aroma was mild of a light grain malt and a musty Belgian yeast with notes of citrus (orange), coriander and a hint of pepper. The taste was lightly sweet and citrusy from the beginning, then progressed with a light spicy and mild funky yeast taste and a slight peppery ending. The flavor lasted an average duration after consumption, with a spicy yeast taste fading slowing into the background. Mouthfeel was light in body and watery in texture with a carbonation that was just beyond mild. Overall this was a very mild Witbier, both in taste and body. Although, it would make a great session beer on one of those intensely hot summer days...

Bottle. Pours a hazy yellow body with a small fizzy white head that faded to a wispy covering. The nose is very spicy, really heavy on the coriander and orange peel, with some light wheat and yeastiness. The flavor is a bit overdone with the spice, there’s just a whole lot of coriander and orange peel going on in here. This is almost coming across like a shandy, there’s so much citrus-like flavor. Light bodied with fine fizzy carbonation. Meh, this would be decent if they ratcheted down on spice bill.

On tap at Chef Geoff’s Dulles Airport. Hazy yellow body with slight head. Hoppy and spicy nose. Taste of hops, crisp, floral, spicy. Lightly balanced. Enjoyable.

Poured a cloudy yellowish color with aromas of light yeast, spice, pepper, coriander, light tangerine, and a touch of wheat. Flavors were a mixture of the aromas a basic wit beer, that didn’t go overboard with the coriander and yeast.

Cold bottle from Beau Thai in Mt Pleasant DC and a draft taster at port city A: pale hazy yellow, thin fine head A: hops predominant citrus, peppery, fresh herbs T: fresh, crisp, mild not heavy on the palate, mild bitter P: light to medium body, thin but creamy-fizzy feel, short lasting O: great summer beer

Draft at Old Town Pour House in Gaithersburg, MD served in a half-pint glass. Cloudy very pale yellow color with white head. Aroma notes of wheat malt sweetness, earthy coriander and light citrus. Taste is also pretty coriander earth heavy, some graininess and yeast. Light body, low-moderate carbonation, crisp with kind of a light peppery/spice finish. An interesting witbier, nice enough but more spice/earth heavy then I cared for.
