Bottle from the Sybarite Pig in Boca Raton, FL. Poured into a snifter. Nice golden yellow pour with a haze. Solid one plus finger head. Awesome citrus, apricot, brett and farmhouse aroma. The taste was solid brett and saison yeasts, malts, apricots, leather, earth and barnyard. Clean, crisp finish. Medium to heavy carbonation. Light body. Very very good.

Appearance: hazy to cloudy (verging on lumpy) medium to deep gold with one fat finger of fluffy white head diminishing slowly to a thick cap, minimal lacing. (3/5) Aroma: earthy brett funk, stone fruit, woody, dry straw, lemon zest. (9/10) Taste: moderate sweet, mild bitter, mild tart. (9/10) Palate: medium body, lively carbonation, dry mildly bitter and tart finish. (4/5)
Really nice - even better than their Standard. For me, funky and tart are a killer combination, especially when in-spec for the style, and this delivers. That said, neither of those elements are aggressive or overdone. Very drinkable, with a dry tart finish that invites the next sip. This is definitely a beer for those who appreciate saisons, sours, and brett. (17/20)

500 ml bottle. Hazy yellow/orange body with a small off-white head. Nice, quiet funky aroma with fruit, wood, malt and grapefruit. Flavor is sweetish fruity, medium malt, some lemon acidy, pleasant funk and some grapefruit type bitterness. Fine balanced body and good, long lasting aftertaste. A fine and complex wild style Saison.

Great farmhouse ale from Prairie. Dark orange color. Aroma is strong brett, apricots, spicy, woody. High carbonated, may be too much, and medium-light bodied. Very drinkable, brett, spicy, fruity, dry finish. No booze at all. Slightly expensive but worth a try.

A steady pour into my IPA glass produces a three finger thick, over the rim, pale tan colored head. The beer is a orangish tinged, straw gold color that shows a hazy, paler version of the same when held up to the light. The aroma smells earthy, a bit yeasty, with lots of dried hay / straw, as well as with a bit of musty fermentation character, and maybe even a touch of something like plastic. As the head subsides a bit, a bright, fresh apricot pulp aroma becomes much more prominent.
The beer is light bodied and slightly tart up front, it picks up solid apricot flavors in the middle and a touch more fruit accentuating tartness through to the finish. The carbonic acid and prickly carbonation adds a liveliness to the texture and also helps to accentuate the fruit character. Up front there is a touch of earthy yeastiness, and there is a backbone of hay like pale grain character as well as a pale grain like cracker, or crushed sun-baked grain flavors here. The apricot plays a definite role here in the flavor, though it is not quite as distinct as it was in the nose.
The apricots seem to wash out the flavor of the beer here, they seem to lighten the overall effect rather than fully compliment the flavors of the base beer. Still this is not overly so here, but it is a minor complaint that detracts from the impact of this beer.

1 pt 6 fl oz bottle from Brewdog online. Hazy yellow golden colour, white foam head and fruity aroma with apricot, yeasty, barnyard notes. Taste is sour fruity, some apricot, lemony citrus zest, grainy, yeast, funk and light spicy bitterness. Light to medium bodied, spritzy carbonation, dry tart tangy finish. Quite drinkable.

Bottle. Pours a soft yellow color with a light haze, small ring of white head disappears fairly quickly. The nose is bright, a little fruity and some farmhouse yeast. Taste is floral and lightly sweet before a modest sour bit. Has a little bit of dry farmhouse grass and yeast. Soft finish brings out a little more of fruitiness. Started off with this a little too cold, really enjoyed the second half of the bottle best after it sat out for an hour or so.

The complexity of Prairie Artisan Ales (PAA) is impressive--despite the common "sour" taste of most of PAA’s offerings, they’re each unmistakably well made; the tartness and yeast and effervescence all remind me of Orval, but--dare I say--better! (only, not as good at the level of crispness, but that’s because there’s more going on in these beers). I for one appreciate the fuller body and deepness of these paradoxically light yet heavy beers--light yet heavy; that’s what apricot is like, and that’s what’s captured here, subtly. Keep up the good work, PAA; you’re helping put the ’farmhouse’ style on the map.

Bottle. Pours hazy yellow with a white head. Aroma is very rural with fruity saison notes - featuring the apricot. You get some pear, straw, apple juice and other stone fruits. The taste is lively dry and sour. you get some apricots, pears and green apples. Straw, grains and some sour citrus as well.

Flat medium yellow body, average sized head. Nice yeast aromas, barnyard, funk, soap, sweat. Notes of apple, raspberry, apricot. Rather dry, sour, lots of minerals. Medium body, oily texture. Nice one.
