Eliza5beth is a golden farmhouse ale that we aged on apricots to allow sourness and light fruit flavors to add complexity to the beer.

Bottle from the Sybarite Pig in Boca Raton, FL. Poured into a snifter. Nice golden yellow pour with a haze. Solid one plus finger head. Awesome citrus, apricot, brett and farmhouse aroma. The taste was solid brett and saison yeasts, malts, apricots, leather, earth and barnyard. Clean, crisp finish. Medium to heavy carbonation. Light body. Very very good.

Hazy yellow colour with a small white head. Farmyard, Belgian yeast, basement, tart citrus and bitterish hops in the aroma. Wow! The flavour is tartness, citrus, yeast, basement and hoppy bitterness. Very tasty. A great beer.

500 ml bottle into tulip glass, bottled on 3/3/2015. Pours lightly hazy golden yellow color with a 2 finger dense and fluffy white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a large amount of streaming carbonation retaining the head. Aromas of lemon, apricot, pineapple, pear, apple, white grape, pepper, wheat, cracker, bread, hay, straw, grass, light funk, and herbal/yeast earthiness. Nice and pleasant aromas with good balance and complexity of fruity/spicy yeast, apricot, and pale malt notes; with solid strength. I got a strong band-aid note initially, but most of it went away with a little time in the glass. Taste of lightly tart lemon, apricot, pineapple, pear, apple, white grape, pepper, wheat, cracker, bread, hay, straw, grass, light funk, and herbal/yeast earthiness. Good amount of earthy yeast spiciness on the finish; with lingering notes of lemon, apricot, pineapple, pear, apple, white grape, pepper, wheat, cracker, bread, hay, straw, grass, and herbal/yeast earthiness on the finish for a good bit. Very nice complexity and robustness of fruity/spicy yeast, apricot, and pale malt flavors; with a nice crisp yeast/fruit/malt balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very smooth, crisp, and lightly bready mouthfeel that is good. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a very nice fruited saison style. All around good robustness, complexity, and balance of fruity/spicy yeast, apricot, and pale malt flavors; and very smooth and crisp to drink for the ABV. The initial aroma off flavors were offensive at first, but everything turned out really enjoyable overall.

Hazy golden hue with lasting fizzy head. Lemony acidity with husky and biscuity malt backbone. Very slight yeast notes which disappoints and could have taken this to another level. Still this is nicely drinkable and not overly tart, just not all that Saison like IMO. Finally got the apricot claimed as it warmed.

Bottle- pour hazy pale yellow, bright white huge head that persists. Nose of funky yeast, slight barnyard, some apricot, cracker and grass. Slightly tart and not as funky as you'd expect but quite tasty. Some residual sweetness keeping this closer to a traditional saison as opposed to a funky beast. Classy and drinkable. >> Full haze straw pour, great retention, thick white mousse. Excellent house saison yeast nose, fresh air, subtle nectarine, fresh bakery, plant. Taste is bread, dough, minerals, Palate is bubbly, dry, mild chalk, effervescent, refreshing. Not sour really at all, low to no fruit character. Apricot character could be from yeast esters only, not intense enough to make me think it was made with apricot.

Bottle. Pours hazy gold with frothy off-white head. Aroma is cereal malts, wheat, citrus, tropical fruit notes, white grapes, and spicy yeast esters. Flavor is dry malt base with great tropical fruit notes, soft hops, white wine, and tasty yeast esters. Medium carbonation.

Bottle; Pour is somewhat murky, light golden, with a two fingered frothy white head into this glass. It does retain well, with light lacing as well. The nose is nice - and by nice I mean it imparts some prototypical saison nose that I believe one would be looking for - which falls apart a bit later. Feint soap, grassy, fruit esters - peppery spices, with a touch of lemon zest.The flavor profile presents a soft mouthfeel initially - it moves to cracker crust, with that touch of funkiness. It moves to lemon rind, with stone fruit and tropical notes - there is more grassy notes, with a somewhat sharper, spicey finish line that ends on the dry side of things. It’s just a nice drinker. I wish I had more to sip on but by no means is this a world beater , folks.

yeah...99th percentile seems about right. Had this after the 1776 James E Pepper (which was strong and also better than expected). I was prepared to be let down, but damn! The aroma instantly had me hooked - light to moderate bretty funk, and the best way I can describe it is dusty apricots. The flavor had that to. The fruit was not subtle but also wasn’t overbearing. Just friggin nailed it. I enjoyed each sip more. One if the best saisons I’ve ever had.
