500ml bottle. Captivating aroma of dried flowers, herb, faintly peppery spice, estery yeast, some slight funk detected along with the lightly winey cast of the Nelson Sauvins and a faint hint of crackery, gently sweet malt. Thoroughly cloudy straw yellow in color with a foamy, lasting, white head and very nice lacing. Flavor profile is rife with Belgian yeast character from start to finish, showing plenty of fruity, spicy, peppery esters, funk and light phenols, with a light-moderate amount of bitterness, citrus and a wonderfully spritzy dryness for a beer of this strength. Effervescent and highly active palate, quite refreshing and lively with a medium body. Highly enjoyable. That this is a single malt and single hop beer is even more impressive.

750 ml bottle. Upon undoing the cage the cork popped straight off under its own volition, startling my wife as it ricocheted around the room. Off to a good start, coming out with guns a blazin’. I’d say it gushed, but it was such a slow gush that it’s more appropriate to say it oozed foam. Pours a murky yellow with plentiful white head -- egg whites beaten until frothy but not yet holding any kind of a peak. Aroma: holy grapefruit. And bubble gum -- no, scratch that, not bubblegum, but rather grape. And onions. And pepper. And lemon. This smells great. Taste: Gah! Taste is ... chemical, aerosol, citrus floor cleaner? Like grapefruit juice mixed with hairspray and finished with a spritz of mouthwash. Not awesome. Peppery, lightly tart, dry but overwhelmingly unpleasant finish. Huge disappointment :(. Trying to power through, but this one is tough to finish. There may only be one dominant "off" flavor here, but that really ruins the rest of it for me. Should have stopped at the aroma I guess. Medium body, soft but prickly carbonation. Overall: 50% amazing, 50% gross. Judging by other reviews I’ve read, I may need to try this again, but doubt I’ll be buying another bottle myself to experiment.

12/26/13. Bottle shared by heykevin at the QC tasting and enjoyed by me again the next day with my brother. Hazy golden orange pour with a nice off-white head that sticks. Nice aroma, fruity, funky yeast aromatics with earthy, wine-like hop characteristics, touches of doughy maltiness. Tasty flavor, citrus, floral, plenty fruity, good funk and yeast, just enough pale maltiness to hold it all together. Yum.

NYE bottle share at Proof. Pours an opaque creamy yellow. Tons of white frothy head. Head holds really well and by the time I finished the sample, the head was still holding. Aroma is straight floral hops and grass. Such a great, but unique smell. Taste is floral hops with a good amount of banana behind it. Nice high carbonation and medium-thick body.

Bottle shared at the 8th Richmond Industry Gathering, 12/1/13. Pours a hazy pale yellow color with a thin fizzy off-white head. Aroma of earth, pepper, herbal and floral notes, honeysuckle. The taste is pale malts, herbal, floral and pepper notes. Medium bodied, well balanced, very nice.

Pours a hazy golden with a large foamy white head. Aroma of bretty barnyard funk, mixed citrus, floral and peppery notes, white wine and very perfumey. Flavor of the same brett character that was coming through in the aroma. Very dry, bready malt, citrus, floral and also perfume like. Need to get my hands on some Prairie Farmhouse yeast! Reminds me a lot of Jolly Pumpkin.

For New Year’s Eve 2013, my first encounter with Prairie. This is a beautiful beer, straw gold with a perfect white head. Big, big aroma: juicy grapefruit and brett, onions and garlic, white wine and must, cut hay behind it all. Catnip. Quite a showcase for Nelson Sauvin. Tons of flavor as well. Grapefruit and black pepper, skunk piss. Tons of drying brett from the mid-taste on. I’m duly impressed. This beer’s merit stands on its elements rather than on a magical intersection of those elements -- but Merica!

Bottle shared by heykevin, pours a hazy light yellow and a white head, the aroma was full of barnyard and must, a little more dirty than I was initially expecting from it, the flavor had quite a bit of must and dirt on the front end with a little bit of the hops coming through in the finish, really musty though, was hoping for it to be a little more bright and vibrant.

FROM NOTES: October 18, ’13.
A: HOLY FUNKY! The Nelson Sauvin hops give off a really musty white wine, overtly floral pungent character with a funky Belgian yeast mix.
A: Pours a very light moderately hazy golden color with two fingers of foam which quickly recedes and leaves no lacing.
T: Follows the nose with floral, musty white wine notes, a Belgian yeasty funk with hints of mustard and lemon notes. Lemony and funky yeasty finish.
P: medium body and moderate carbonation.
O: This saison just isn’t for me, but I can see that some make like the funky mix of strong flavors.
