Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

500ml bottle pours a hazy light golden orange color with a generous white head that settles to reveal only a few spots of lacing on the glass. Aroma is yeast and lemon with some barnyard funk. Taste is a mild lemon sourness with a herbal hop bitterness and a grainy malt sweetness. Medium bodied with generous carbonation. An interesting saison that is not quite as tart as most of this style that I have tried so far, this is an easy drinking saison.

Pours a hazy orange with a thin white head. Nose is citrussy, bubblegum with lots of Brett aromas. Very fruity. The spicy Brett flavors are well present accompanied by apricot, banana, white pepper, and clove notes. Medium carbonation. Great Brett Saison!

Light gold, with a nice sturdy head. Subtle grassy, banana and spice aroma. Flavor yeasty and fresh bread, light pepper flavors, some grassy notes. I get some woody flavors, too. Really nice stuff.

500ml bottle, cellar aged for several months. Yeast dominates the aroma easily, with notes of brett funk, peppery spice, dough, faint bubblegum, white wine, tropical fruit, lemon citrus, faint sweetness and some light herbal tones in the background, as well. Clear light golden in color on the initial pour (though there is a ton of sediment here, I managed to avoid it at first) with a hugely foamy, rocky, lasting head and gobs of lacing to boot. Flavor profile is comprised of softly grainy, sweet malts, grassy, herbal hops and that dominating yeast blend, the brett really making its presence felt, providing endless funk and drying out the finish considerably. More peppery spice and citrus here, along with a light-moderate degree of hop bitterness, faint melon and pear, and ending with a wonderfully leathery yeast presence. Highly effervescent and refreshing on the palate for a beer of this strength, nary a trace of the alcohol to be seen, in fact, and with a medium body. Pretty amazing stuff.

Bottle from , San Diego, drinking at home. Pours bright, clear pale straw, billowing white head of large bubbles that immediately subsides to patches, with visible bubbles still rising (in a clean, non-nucleated glass). Smells of spicy peppery saison yeast, fruity brett funk. Tastes medium sweet pils malt, then spicy bitter noble hop flavours, slightly vinous acidity, bretty funk, dry finish. Light body, sharp carbonation, large bubbles are pretty fizzy tbh, oily/creamy texture, lingering funk but otherwise a short finish. Strange one - I like it but that fizzy carbonation is a bit off-putting, would definitely prefer finer bubbles.

Pours out a hazy pale straw topped with a small head. Nose is slightly funky barnyard with hay, yeast and some spice. Taste is as the nose with some white pepper and citrus. Dry and well balanced. Excellent saison.

Crisp, yet hazy golden coloured body with a glow of honey and a rich, very thick and long-lasting whit ehead that leaves a slightly ugly lace, around four centimetres tall. Aroma of sour grapes, yeast, brett, lactic notes, alcohol and some deep oak. Medium-bodied; Rich very pungent yeast flavours with bread, bananas, funk, sour cherries and milk all on the tongue. Aftertaste shows a very pungent and earthy malt flavour with a deep oakyness, some subdued sweetness and a hint of pepper on the finish. Overall, an interesting beer - looks and smells much lighter and bretty than it is, but tastes much harsher than it finishes as. The complexity is definitely there, but this beer is decent at best. Aside from the great ’reputation ratings’ it’s a good beer to try if you want to be surprised, but not a great beer if you want something thats consistent and polished all the way through - especially for this price. I sampled this 50 cL tall (Choc-styled) bottle purchased from The Proper Pour @ The Source in Denver, Colorado on 07-June-2014 for US$9,00 sampled at home in Washington on 22-November-2014.

A funky, dry, very basic saison. Reminds me of the older Belgian varieties like Dupont and even a bit like Boulevard’s Saison Brett. Light appearance with a mild lemon and pepper character.
