Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

A great saison. Pours a bright golden orange colour and a hazy, clouded body. Atop is a bright white head, effervescent bubbles and a ton of carbonation. The aroma is fresh and fruity with light banana and citrus fruits. Toasted wheat malts with light honey and caramel notes. A subtle spice blend with a bit of coriander and cracked black pepper. Bretty and musty with a lighter farmhouse essence. A nice, well balanced and crisp brew with a mild hop and nice saison yeast notes. Overall,a great saison.

Keg at the CP&K, Pimlicoco, 29/12/14. Hazed golden blonde with a decent white covering that retains well. Nose is tarte apricot, on the turn melon, pineapple chunks, funk, light straw. Taste comprises pear juice, apricot jam, farmyard, light spice, funky, tangy orange. Medium bodied, fine carbonation, semi drying close. Decent tangy saison, alcohol well integrated but you know there’s a lick or two in the mix!

500ml bottle into a tulip. Pours a slightly hazy straw yellow with a very full and fluffy two finger white head. Outstanding head retention but the lacing is somewhat lacking. Aroma is very spicy and peppery mixed with lemon peel and coriander. Some nice Brett funk going on too. Very complex and enjoyable. The flavor is not quite as bold as the aroma but still hits the mark for the style. Coriander and lemon with the barnyard notes more restrained. Nice peppery dryness throughout and the alcohol is absolutely nowhere to be found. This beer is extremely drinkable. Overall, a very nice Saison and interesting for a style that seems hard to perfect. The Brett adds a nice twist and really works well in this beer.

Amazing saison. Slightly funky, dry medium bodied refreshing goodness. So complex and layered, not muddled, awesome beer.

Clean golden, decent fluff of a white head.Peppery peach and pink peppercorn, snuff of grape. Initial taste was crisp, lean and more peppery. Fairly dry throughout a firm but blanketed carbonation. Finishes creamy light tart, lemon and tiny tiny gingerbread on the linger. Lush.

Bottle, Tall Boys, Leeds

500ml bottle pours a hazy light golden orange color with a generous white head that settles to reveal only a few spots of lacing on the glass. Aroma is yeast and lemon with some barnyard funk. Taste is a mild lemon sourness with a herbal hop bitterness and a grainy malt sweetness. Medium bodied with generous carbonation. An interesting saison that is not quite as tart as most of this style that I have tried so far, this is an easy drinking saison.

Pours a hazy orange with a thin white head. Nose is citrussy, bubblegum with lots of Brett aromas. Very fruity. The spicy Brett flavors are well present accompanied by apricot, banana, white pepper, and clove notes. Medium carbonation. Great Brett Saison!

Light gold, with a nice sturdy head. Subtle grassy, banana and spice aroma. Flavor yeasty and fresh bread, light pepper flavors, some grassy notes. I get some woody flavors, too. Really nice stuff.

500ml bottle, cellar aged for several months. Yeast dominates the aroma easily, with notes of brett funk, peppery spice, dough, faint bubblegum, white wine, tropical fruit, lemon citrus, faint sweetness and some light herbal tones in the background, as well. Clear light golden in color on the initial pour (though there is a ton of sediment here, I managed to avoid it at first) with a hugely foamy, rocky, lasting head and gobs of lacing to boot. Flavor profile is comprised of softly grainy, sweet malts, grassy, herbal hops and that dominating yeast blend, the brett really making its presence felt, providing endless funk and drying out the finish considerably. More peppery spice and citrus here, along with a light-moderate degree of hop bitterness, faint melon and pear, and ending with a wonderfully leathery yeast presence. Highly effervescent and refreshing on the palate for a beer of this strength, nary a trace of the alcohol to be seen, in fact, and with a medium body. Pretty amazing stuff.

Bottle from , San Diego, drinking at home. Pours bright, clear pale straw, billowing white head of large bubbles that immediately subsides to patches, with visible bubbles still rising (in a clean, non-nucleated glass). Smells of spicy peppery saison yeast, fruity brett funk. Tastes medium sweet pils malt, then spicy bitter noble hop flavours, slightly vinous acidity, bretty funk, dry finish. Light body, sharp carbonation, large bubbles are pretty fizzy tbh, oily/creamy texture, lingering funk but otherwise a short finish. Strange one - I like it but that fizzy carbonation is a bit off-putting, would definitely prefer finer bubbles.
