Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Bomber from either tmains or minorthreat. Be careful opening this as if you take off the cage without paying attention the cork will pop right out - no problem with gushing though. Hazy pale gold with a generous white head that settles and remains throughout. Some yeast, grass, hints of alcohol, some spice, hay, a bit of funk, some chardonnay notes. Moderate carbonation, full but fresh body, some funk, very very mild tartness, grassy, becomes very dry, with a great ending.

Bottled (thanks veliempoiot!). Golden colour, minor head. Aroma is herbal, some spices, quite saisonlike in many ways, a bit citrusy notes. Flavour is fruity, citrusy, farmyardy and earthy.

Bottle 750ml. Pours somewhat hazy blond with medium white head. Good lacing. Aroma is of bretts and lots of fruit action. Taste is fruity, bretty, some leather, wine, some belgian yeast. Palate: Medium body. Overall: Very good. Bretty without pushing the envelope. Intense fruits, good belgiumness. Very drinkable.

This was a big-time gusher. As soon as I got done unwinding the cage, but before I had removed it, the cork shot off with a huge popping noise. A few seconds later the beer geyser emerged, resulting in about 1/3 of the bottle being lost. Anyway, on to the beer.

Straw colored with a white head. The aroma has some nice lemon notes, as well as a bit of funk, some Belgian yeast and some white pepper. The flavor is similar. I get some nice funky Belgian character from the yeast, as well as some biscuit malt, wheat, grass, pepper and coriander. High carbonation and medium mouthfeel. A very nice saison, just wish it was a little less carbonated and not a gusher.

Corked bottle and served in tulip: pours a clean golden hue with an initial big fizzy head but little in the way of lacework. The aroma has yeast driven esters of spice and banana, pils and 2-row malts, light handed Saaz hop vapours along with some dusty earthy notes. There is also some sweaty brettanomyces notes that are a bit of a turn off that makes the brew start to go into geuze territory. The taste is mild grains, light fruity notes, moderate spice and a bit of farmyard funk. While I like the bitterness and the spice it is noted I think the grains could be cleaner and the earthiness toned down a tad. Lively and aggressive, dry but metallic. Not all that refreshing really (given the 7% ABV, not a surprise) but overall I like this much much more than the Prairie Hop offering. Tighten up the brewing process and this could be a homerun.

Brett, baryard, citrus and funk aromas. A cloudy light yellow with a robust bubbly, mostly lasting, white head and no lacing. The taste is somewhat sweet although there is a "sour" presence. Bubble gum, yeast, funk, citrus with a crisp dry finish. Medium-light body and crisp carbonation. Overall, I found this to be a Saison with sour influences. Wonderfully enjoyable. Want to drink again.

Pouring at The Festival in Portland with Kramer, Andrew, and J-Dadmond. Pours a hazed gold with a thin white head. Musk, herbal notes with lemon and funk. Soft wheat, musk, and faint alcohol. Gentle musk, toast, wheat. Light musky wheat on the finish.

Pours a lightly hazy pale golden with a large bubbly white lacing head. Aroma of brett, pineapple, peaches, peppery saison notes. What a wonderful bretty aroma! Flavor of black pepper, tropical fruits, peaches, the brett is there but not as prominant as it was in the aroma. Flavor coming through a bit more fruity. Another amazing beer from this great new "brewery".
