Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Tasted side by side with elisa5beth. Pours a cloudy light straw color with active carbonation feeding a decent sized white head. Aromas of some dusty, funky fungus. Taste is pretty mushroom-y, earthy, almost dirty. Noticeable alcohol bite. Not super funky, not sour in the slightest. Pretty average.

16.9 oz bottle to tulip (shared with the Mrs.). Looks good for the style; a cloudy orange with fluffy white head that steadily dissipates into lacing. Smells solid; Yeasty, musky, earthy, leathery, and mildly spicy with a notable brett presence. Tastes like it smells with a solid mouthfeel. Good, but not their best effort.

Bottled: unk Pours a light lemon yellow, almost neon yellow ale with a solid sheet of bone whites. Smells of lemongrass, some hay, some pineapple and grass. Flavor has a hint of alcohol (surprisingly), some sweet grain, some corn, some bitterness and chalky yeast, Iím really having a tough time getting away from the grain alcohol character Iím getting. Light bodied with moderate carb and a wet finish. The mouthfeel is really spot on for my satisfaction, great for the hot weather. I like this beers concept, the nuances and most of the aspects, my issue is with the alcohol character I get, and Iím certainly surprised by its presence. So much so that I wouldnít buy this again at the $17 I was charged here in the great state of Massachusetts. EDIT: as it has warmed some more, the alcohol flavor I was getting has died down and the original flavor has been modified from 3.25 up to 3.75. I would probably drink again, but the price point still steers me toward something like Upright, Stillwater or the newly found Propolis for my money.
