Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Hazy orangish with a dense white head. Aroma of pepper, peach, citrus, bread, and Belgian yeast. A little sweet and funky with a nice hop presence. Quite good.

Bottle at Stone Sour Fest 2013. Pours a cloudy gold, with a white head. Crackery cereal malt, lime, stone fruit, grass, Belgian yeast, peppery spice, and mild brett. Good, but not amazingly so.

Bottle. The look is cloudy, off white head, and yellowish orange. The smell is beady, pepper, yeast, cracker, fruit, and esters. The taste is yeasty, fruit, esters, bread, and nice. Easy, drinkable, and good.

750mL bottle. Hazy golden appearance with a large white head. Aroma is of black pepper, hay, lemon, coriander, and perfume. Taste is of lemongrass, hay, coriander, ginger, white pepper. Very dry...very we’ll executed.

750 ml. Light golden body with a fizzy, white head. Champagne-like bubbles. Aroma of funky brett, fresh pilsner malts, citrus, lemon, pepper, grass. The flavor is moderately sweet and lightly bitter. It finishes lightly sweet and lightly to moderately bitter. Some tartness. Dry. Medium body, watery/velvety texture, lively carbonation. Starts with a distinctive brett taste. That gives rise to citrus flavors and then a bitterness that lingers takes hold. Enticing aroma. Bright, clean flavors.

750 ml bottle from Secret Santa. Thanks. Pours a cloudy yellow color with a small white head that immediately disperses to a fine ring around the glass. The aroma is strong with Belgian yeasts (but not saison yeast) and features key limes, cilantro, soap, some funk and mild spices that hint of clove. The taste (to me) conjures up urinal cake flavors and is a flavor I very much dislike. The palate is smooth and light with medium carbonation. Finishes long and dry. Overall: Hell no, not for me.

750mL c&c. Rating #5900. Bought at El Cerrito for $11. Pours clear light golden with massive champagne carbonation. Fizzy looking white, meringue foam. Good retention, soapy lacing. Long lasting high carbonation. Nose is phenomenal- fresh and juicy peach, sweet baked apple, key lime pie with whipped cream, not even really funky or Brett heavy. More like fresh orchard (grass, fruit, fresh air). Taste is dry and juicy, crisp and snappy big pilsner malt. Mild Brett gives some very muted funk, some pineapple juiciness. Dry finish but not dusty or astringent, no yeast in suspension. Just a tad of white alcohol in the finish gives this some body. Just very bright. Fantastic. Saaz hops, pilsner malt, Brett? Yes please. 7/4/2013 9/4/8/5/17=4.3

Une robe jaune scintillante. Une mousse blanche et aérienne. Un nez qui offre cohésion et profondeur. Des fleurs et du miel. Des odeurs d’étable et des parfums chevalesques. Une brise houblonnée noble. Des raisins blancs et autres choses fruitées. Des céréales pâles et poivrées. Sur les papilles, une aventure ravissante et savoureuse. Une base céréalière intelligente. Des microbes qui sont bons pour la langue. Un Saaz qui vibre et des épices qui vont et qui viennent. Des fruits jaunes et blancs qui naissent et qui meureut entre chaque gorgée. Sur le palais, un liquide qui présente un corps ferme avec ses bulles bien serrées et sa texture presque huileuse. Une finale vraiment fantastique, fruitée et sèche avec ses notes surettes et sa magie blanche.
