Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

UPDATED: SEP 11, 2013 Bottle. Pours golden with a big white head. Lovely flowery and sweet aroma with notes of honey, citrus and white pepper. Smells a lot like that chewing gum thing in the regular Fantome Saison. Enormously flowery taste with a distinct tart and peppery finish. The honey notes are lurking in the background. Some alcohol notes in the aftertaste. Big bodied, yet not a sipper. "True to style" (meaning not as overhopped as some american saisons tends to be).

A very nice fruity saison. Pours an ugly yellow with a thin white head. Smells like lemon and pine. Taste has a lot of lemon, and some fruity background. Not very dry like many Saisons. Paired with a Seared Ahi Tuna, Mango and Cucumber salad, a little more earthy tones are brought out. Had in the bottle. ---Rated via Beer Buddy for iPhone

Pours cloudy yellow with a large white head. Smells farmhouse funky, of lemongrass, and fruits. Taste is peppery, fruity, and funky. Light-bodied with a fizzy texture and active mouth-carbonation, Prairie Artisan Ale Prairie Ale finishes with a mild funkiness.

Draft on tap at West Lakeview Liquors (Chicago, IL). Prairie event.. Neate! Pours a well hazed golden dulled hue, a bit of darkness in the body. Bigger cakey offwhite head sits atop and laces well. Aromas show some gentle funk, terroir, and yeast. Mellow fruit, dry yeast and funk. Some mellow with mellow apple, pear. Initial is fruity, gentle, touches of vanilla, pear, gentle earth and apple. Subtle and bready, a touch sweet. Gentle tartness as we round the corner, mellow brett grows firmly. Cobwebs, bread, and straw. Backend is dry, a bit grassy and earthy. Mellow dry yeast, some faint spiciness, terroir. Really well done here, with a nice fruit slant then quickly wild and dry bretty elements as we finish, some floral and straw. Nice.
