Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Fat bishops örebro. Grumlig gul vätska. Jästig och fruktig doft. Härligt stallig smak. Äpplekart, hö och blommor. Värmande alkoholtouch med bra kolsyra

Stunning pale golden pour w/ a retaining white head that leaves lacing. The aroma contains a generous amount of spices. The taste is very Belgian esque. It’s very spicy w/ a little bit of a bite in the middle. It’s rather soft on the palate & finishes relatively clean making it dangerously drinkable at over 8%. Quite possibly the best saison I’ve come across!

Bottle. Pours murky golden with a big, foamy white head. Aroma is of malt, spice, funk, and yeast. Taste is of funk, soap, and yeast. Has a nice spice taste to it. Has a bready malt backbone. Mouthfeel is very soapy, almost fizzy. Body is very carbonated, and goes down easy. Aside from being very soapy, it’s a very good beer.

Bottle. Slow gusher. Pours a near clear pale yellow with a large frothy, medium to fully lasting head. Nice aroma with a light floral touch along with citrus and funky barnyard yeast. The brett character is very nice! Taste is nice also, balanced with a light sweet note at first into a pungent and lightly spiced / peppery finish. Semi-dry and lasting peppery finish. This is a fine ale indeed. Drinkable yet potent with alcohol, and loads of good flavors! Medium bodied with close to high levels of co2.

Lemon, funk, cobweb, brett nose. Hazy golden, thick head. White grape, brett, cobweb. Medium body, soft carbonation, warm. Vinous, good balance and transitions, very bretty.

Orange colour and smallish head. Aroma has sourness, sweet fruits and hay. Taste has some sour apples, belgian yeast and pineapple bringing some sweetness. Medium body and medium carbonation. An ok saison.

(bottle - 500 ml) Cloudy gold pour with a thick white head. Dry bitter hops and a touch of tart brett in the aroma. Tart with a good amount of sour funk and a dry grassy finish.

On tap @ La Capsule, Lille - FR. Color: hazy pale blond beer with small carbonation and small white foam. Smell: grassy and sour domination. Hay notes. Taste: fresh sour taste, hay and grassy finish floral. Really internist and amazing drinkable for 8.2 ABV!!! Aftertaste: citrus and sour, grassy and astringent finish. Amazing good beer !

Bottle, 00741. Pours slightly hazy yellow, with a big creamy head receding to finger thickness. Aroma is sweet tart yeast, with notes of funky earthy brett, roasted malts with bread, as well as phenolic notes of red wine and kelp. Rather odd actually, in a nice way. Jolly good. Medium body, with average to fizzy carbonation. Flavour is tart, wooden yeast and roasted malts with grain and cereals, as well as over-ripe fruits, pepper and notes of bretty farmhouse. Dry earthy finish.
