COMMERCIAL DESCRIPTION
Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

This dazzling Saison’s citrusy, herbal hop profile satisfies from aroma to finish, accompanied by precise, soft cereals and delicate yeast rusticity.

Further Personal Perceptions:
-A sheet of foam settles atop the cloudy yellow. It fizzes away a bit too quickly for my liking.
-Noble hops and yeast signature combine for truly compelling results.
-Carbonation is intense and prickly, yet manages to create a fluff up the mouthfeel.
-Malt profile is bready, baguette-like.
-This is as quenching as can be without ever being too timid flavor-wise.
-The finish is a return of all that was present in the aroma and flavor profile. Just lovely.
-There is A LOT of yeast in this bottle. The second glass, even though the bottle had been vertical for many hours, is turbid, full of yeast. The aromas and flavors are still there, but in a rougher, murkier state. There must be ways for them to not add so much to each bottle...

Very strong white head, hazy gold. Sour hay, yeast and farmyard on the nose. Sour, definite notes of black pepper and sour fruit. Finishes dry and spicy. Wonderful.

Poured from a bottle, big white head, wonderful gold color. Aroma of fruits, spices, that funky saison smell. As with other saisons of this caliber, there is good carbonation. Taste is tarty, sour, and very dry. A really good saison. ---Rated via Beer Buddy for iPhone

On tap at Cardinal. Pours light golden with big white head. Aroma of citrus, effervescent powder, sulphur, drain. Taste sweet, bacterial, metallic, with sour-dry finish.

Keg in CBC Clapham. Bright hazy Amber, big white head. Nose is big lovely funky, light farmyard, fruity yeast ester, crisp saison yeast, lemon, meringue, white sugar. Taste is lemon, funky, fruity esters, slight straw and grassy. A very good American saison.

Fra fat på Mandag i annen, Cardinal april-15: dette ser ut til å bli kvelden for de gode fatøl! Her finner jeg en interessant mix av pepper og citrus i både aroma og smak (kanskje et godt øl til fårikål?). Fint karbonert. Lang ettersmak, en virkelig god og pepperfrisk øl med pikant syre.

Tap at Cardinal. Pours hazy straw colored with a big creamy white head. Aroma is yeasty with a nice Brett presence, some pepper as well. Taste is moderate dry, lots of yeasty notes, almost too much and overwhelming, but interesting enough to be enjoyable.

From tap at Mi2 at Cardinal 20.04.15. Very cloudy, pale, greyish yellow. Diminishing white head. Sour and complex aroma and tastr, with hints of succade and pepper.

On tap at Cardinal Pub & Bar, Stavanger. Hazy pale yellow colour, large white head. Distinct aroma of brettanomyces / farmhouse, wine yeast, lemons and green and black peppercorns. The flavour is medium dry, a slight acidity but not really sour, distinctly yeasty, with loads of green and black peppercorns. Not very bitter. Unusual and interesting, but maybe too yeasty?
