Prairie Gold is a dry, highly effervescent saison fermented with a mix of ale yeast, wine yeast, lactobacillus and 2 strains of brettanomyces. This beer highlights the various yeasts and bacteria used to make it. Lemon, pear, white wine grapes, and a touch of funk dominate the flavor and aroma in this champagne like beer.

500 ml bottle. Enjoyed at Los Angeles, CA. Pours a fresh citrusy notes, fresh herbs and white grapes. Flavour of crisp citrusy bitterness, bright tartness, white grapes, mild sweetness and complex yeastiness. Medium bodied. Bright and refreshing. Very authentic lambic-like tartness here.

50 cl bottle @ hotel room, Los Angeles. Aroma is tart with lemon and grapefruit. Also some earthy tones. Flavour has grapefruit, earthy tones, some lemon and white wine. A bit too fizzy palate. This one has some Cantillon gueuze in it. Interesting stuff, perhaps a bit too acidic for me.

Pours orange with a foamy head. Aroma of funky yeast, bretta, fruits, citrus, vinous fruits and tartness. Taste is tart, funky and vinous with some bretta, grape, yeast, citrus and ripe fruits. Finish is tart, funky and yeasty with some hints of sourness, grape, bretta and vinous notes. Interesting. Almost like a white wine.

My Bottom Line:
Lactic notes are found under crumbler-like cereal flavors, whilst citrus fruit ride tiny, prickly bubbles to a finish where pear skins and tartness coincide.

Further Personal Perceptions:
-A rapidly fleeting head of foam disappears into the murky beige.
-Bottle conditioning misses the mark in this one. The mouthfeel is far from ’champagne-like’, as the label states.
-This is rather quenching and Berliner Weisse-like, but at 7% is doesn’t offer much more than other brews of the same ilk which are half as strong.
-The aroma and flavor profile are quite engaging, especially in sweltering heat.
-The finish is tart but not really ’sour’, as stated by the label.

Pours a cloudy gold from the gushing bottle with big white head that dissipates quickly. Aroma of brett funk, soft Belgian esters, and slight fruitiness. Taste is more assertive, nice brett funk, slight lactic acidity, good lemon and peach fruit notes. Good carbonation, nice clean mouth, good stuff.

Bottle shared by Dad, hazy straw gold with huge white head and active carbonation. Notes were pepper, spice, lemons, grass, and other random florals. Balanced well.

On tap at Binny’s Lincoln Park tasting room. Rich creamy but bright and slightly sour. Really good mix of styles. Very tasty. Quaffable and tart but not overwhelming. Really nice well crafted beer.

Nice sour. Hazy golden. Bit of musty and vinous nose. Taste is pleasantly tart, lemon and fruity. Just a good straightforward sour.

Bottle. Hazy gold with big white head. White wine, lemon and other citrus, light mustiness. Sharp crackly mouthfeel. Solid.
