Prairie Gold is a dry, highly effervescent saison fermented with a mix of ale yeast, wine yeast, lactobacillus and 2 strains of brettanomyces. This beer highlights the various yeasts and bacteria used to make it. Lemon, pear, white wine grapes, and a touch of funk dominate the flavor and aroma in this champagne like beer.

Tap pours lightly hazy golden hue light orange tint with some tightly knit white fizz. The aroma has an earthy dried fruit, pear apricot, apple, with a little yeasty funk. The flavor is similar, a little sweetness with the earthy dried fruit and champagne brett funk that sort of works, sort of clashes. A slightly dry finish still leaves it refreshing and pretty enjoyable.

16.9 oz bottle poured into a Spiegelau tulip. Hazy straw yellow with two fingers of off-white head. Aromas of Brett, funk, tropical and stone fruit, white wine. Tastes of tropical and stone fruit, some sweet lemons, light funk, Brett, balanced tart acidic notes, wheat, a little white wine and oakiness. Medium body with a dry finish. Tasty sour saison.

Bottle. Slightly hazy golden color with a small white head. Sweet malt, pear, white wine, and some lacto on the aroma. Flavor is like a golden ale with a hint of tartness and light fruit, oak, and white wine. Mildly tart. Medium body with good carbonation. Enjoyable but not that sour.

The flavor is dominated by sweet tart character. Itís moderately dry, a touch husky, a bit fruity with a pleasant but low level of bitterness.

Bottle (16.9 oz). Pours a medium, hazy straw gold, creamy white head with excellent retention and solid lacing. Nose is funky Brett, barnyard, straw, earthy, minerals, daffodils. Mouth is medium full, creamy, tart up front, mellows out mid-range, chardonnay, dry grape juice, breadiness, hay, lemongrass. A very nice sour that Iím drinking on an empty stomach... but itís good enough to be liquid dinner at 1:30 in the AM.

On tap at pour. Have not been disappointed by this brewery yet. Hits all the right notes for me: interesting, refreshing, and I-want-more. Pours a hazy golden. Saison notes are there but right alongside the sour and the funk. Subtle all around. Really well balanced. Citrus as well as notes of white wine. Love the tartness happening. Lots of bubbles. Delicious.

On tap at Local Cantina in Clintonville. Orange gold pour with thin off-white ring. Aroma of lemon and funk. Tastes are light even tartness - spice, grass, yeasty, wheat. Very nice.

Hazy lemon yellow pour with two fingers of white head. Very nice aroma, funky and tannic with some peachy notes and a bright acidity. Very tart in the mouth with a soft tannic bite and round carbonation. Tropical fruit and vinous with a light body and dry finish.
