Once you are a few sips into the beer, you can begin to get hold of the complexity of the aroma: Brett, funk, a woody-sour scent that you get in a beer like La Folie or Cuvee de Jacobins, rummy figs and raisins, bourbony spice.
It has the appearance of a very well attenuated beer - bubbles and lacing hang around well after the pour - the beer can pour hard to generate this staying, velvety, thin layer of bubbles.
It honestly just tastes like an amazing barrel-aged old ale/barleywine-style ale with brilliantly utilized Brettanomyces characteristics including tartness and funk that complement what is already great about this style.
But I can see people not appreciating this beer.. it’s big in a way that takes, I think, a real sippin’-type-session to understand. And probably a love for wild yeast, because folks, this is a funky one.

Bottle pours a dark brown with a thick tan head. The aroma is very a strong bourbon with a little oak. The taste is very sweet with a light oaky finish. Medium body with a wet finish. Not the strongest oak barrel age, but pretty good.

Bottle. Pours with a hazed deep brown hued body and a large off white head. Aromas are of dark fruits, plums, oak, brown sugar, raw wood, vanillins, burnt caramel and fusel. Pencil shavings. Flavors are oaky, peppery, and dry. Lots of lactone, lightly tart, brown sugar, cola. Mild umami. Dark fruit. Lively carbonation, dry, medium low body with tannins.

From bottle at The Trappist. Pours dark brown with a decent tan head and a strong treacle aroma. There is a slightly sweet dark malt flavor with a sour oak finish. Complex and tasty.

Smells of raisins and figs. Thick deep dark brown color. Thick maltyness with a wine like streak that peaks out and then fades back in to the malty sweetness. Thick leaves a slight sour behind imbedded in a malty coating. Great winter warmer for the season.

From bottle. Christmas in a bottle. Unfortunately, I don’t like Christmas. This beer, while interesting, is a compelling metaphor for Christmas--too much going on and not enough to enjoy.

Bottle @ home, picked up at Supermarket Fort Collins. Pours a bit murky brown appearance with a thin head. For some strange reason, the wax has a rank, non-neutral aroma. Smelling the beer from the bottle is not pleasant. Smelling the beer from a glass is much better: lot of candy sugar, light brett, plum, fig, and dark fruits. Fairly woody/oaky, vanilla, tart/bretty, slight pineapple/orange fruity, slightly goopy caramel, a bit boozy flavor. Pretty enjoyable but possibly my least favorite from these guys thus far.

Pour out of 500 mL bottle, thanks Aaron! Dark brownish black pour with off white head, aroma brought notes of cherry, dark fruit, hints of raisin, plum, nice roast, dark cocoa powder, slight earthy notes. Taste is a mix of dark fruit, caramel, toffee, hints of cherry, hints of earth, nice dark cocoa powder, slight brett in there. Tasty.

500mL bottle. Pours a hazy dark brown with a thin off white head. Toffee, vanilla, grapes, oak, tobacco. Good amount of sourness. It was ok but probably not something I'd try again.

murky brown pour with an off white head. Aroma is oak forward, toffee, booze, a bit of hazelnut. Big beer. Not overly sweet, a touch of sourness really brings this one together. Boozy finish but not overly so. Slightly over carbed for my tastes.
