COMMERCIAL DESCRIPTION
Our winter seasonal beer, Babayaga is a 7% export-strength woodland stout. We smoked some malt with rosemary, and added a few other embellishments. This beer is inspired by Eastern European folklore, by woodland, streams, cold dark nights and woodsmoke. This was brewed at Westport, MA by Dann and Martha with help from our friends Adam and Br. Brian. The mash contained over 4,000 lb of malt (the biggest beer we’ve done) and there were also rye, oats and wheat in the grist. Fermented with a mix of English and Belgian yeast strains.

Bottle at Papsø. Black coloured with a meium sized beige head. Sweet and roasted aroma of liquoirce, caramel and dark chocolate. Sweet and roasted flavour of liquorice, caramel and dark chocolate. Roasted finish.

Bottled. A pitch black beer with a brown head. The aroma has notes of caramel, malt, and chocolate. The flavor is sweet with notes of roasted malt and chocolate, leading to a very dry and roasted finish.

22oz bottle, purchased somewhere in PA, November 2009 batch. Pours a very dark cola-brown color, mostly opaque; creamy, solid, fine-bubbled medium-tan head with excellent retention and lacing; solid pour. Great show of bittersweet chocolate, nougat (for Pete), caramel, and roasted malts in the aroma; oily, tempered sweetness, with a hugely complex malt character; reminiscent of something like Anchor Porter, with a lot of that darker, bittersweet, layered malt character; very nice approach. Medium body; medium carbonation; lightly creamy, with no alcohol here; there’s a touch of rust at the front of the palate, like a copper penny, but aside from that this is damn tasty: bittersweet and milk chocolate, roast, with hints of caramel and darker charred malt notes; there’s seemingly a light spiciness from the rye contribution as well; layered, dense stout with a very strong bittersweet component; an interesting rendition of the style. Lengthy, lasting finish of dark / bitter chocolate, nougat, and some light caramel; modest citrus / pine bitterness at the far end; balanced.

Dark brown pour wit a light tan head. Fruity aroma with berries,light roast and licorice. Dry roasted flavor with lots of licorice. Nice and easy to drink despite the ABV.

22oz bottle. Large brown head atop brown-black body. Aroma is moderately sweet, cocoa, roast, some smoke. Taste is moderately sweet, chocolate/cocoa, roast, some coffee, rye spiciness, faint alcohol. Medium body.

Beautiful, nicely smoked and roasty, chocolate nose. Taste is light to moderately sweet, moderately bitter. It’s actually rather spicy, maybe from the rye, maybe from some actual spices or yeast. Lots of smoke, lots of roast, plenty of dark chocolate. Very nice.
