This is a northern German staple and our flagship beer. This is a crisp, pale and dry interpretation of the style. Well hopped with noble German varieties and a special strain of yeast from a German monastery. Prost Pils is pale gold in color and capped with a thick, brilliantly white, dense collar of foam. With the first sip spicy hop flavors come to the forefront. As the hop begins to fade, the wonderfully soft imported pilsner malt is revealed. The finish, with its herbal, pleasantly lingering hop note balanced by a rich malt counterpoint, demands another taste.

On tap at Prost. Gold and clear appearance with a white head and thick lacing. Aroma of noble hops, herbs, mild spices and light pale malts. Similar flavor, mildly bitter and spicy with light sweetness. Light body with a dry, crisp feel. A bit bland.

Pint at Falling Rock. As expected, this is pretty similar to their keller pils. A bouquet of cereal, grass, wood and dough are in the nose. The palate is spritzy and light. I’d say this is a notch maltier than the keller pils, making it less dry and more balanced overall. As whole, the beer is pretty subdued but still has good, crisp, clean flavor. It doesn’t excite me as much as a hoppier Czech or American pils, but it is still quite tasty and will be a constant go to when I want a lighter beer.

Draft @ the brewery. Pours a slightly hazy yellow color with a white head. Has a fruity malty grainy grassy hoppy aroma. Fruity malty grainy flavor with grassy hints. Has a fruity malty grainy weak grassy finish.

On tap @ Prost. Pours a clear golden color with a white head. Nose is really grainy. Bread and biscuit malt aromas and sweetness. Grassy hops, popcorn, and some herbal notes. Flavor is chalky and bitter. Grassy hops, white grape, bread, and some biscuit. A bit of apple on the finish.

It is very exciting to see a German-themed Brewery in the greater front range of Colorado. The taproom and brewhouse absolutely portray this with the beautiful copper equipment and Oktoberfest themed tasting area. The Pils (and all of Prost’s beers) was paired with beautiful glassware and I was ecstatic to see a golden, clear beer with a dense white head inside. I did catch some subtle floral aromas but was a little disappointing at the overall affect from later hop additions. I thought the beer had some great carbonation levels and I could easily distinguish it with the popular German style: nice fizzy sensations on the tongue. Taste wise, it was relatively bitter and pretty dry. Malts did not seem to be the forefront of this beer. Overall, the beer was very drinkable but a little underwhelming.
