Quaff Bros. What the Wheat? is a Wheat wine recipe that has been aged in wheated Whiskey barrels for 60+ days and then further aged for a month in the bottle before release. This big beer is aggressive right off the bat with a bouquet of vanilla, molasses, coconut and booze. The beer continues to flow on with a medicinal and rich mouthfeel, hints of citrus and gripping acidity. The finish is long, smooth and full of flavor. What the Wheat? will not last long! This 10% abv bruiser of a beer is made in very small batches, much like your favorite Bourbon or Whiskey, so make sure you grab a couple for enjoying now as well as aging in your cellar. This beer was crafted for Quaff Bros by Listermann Brewing Co.

Definitely a pleasant surprise. Based on the description, I would have figured that it was probably not my thing. However, despite the alcohol and barrel aging, this is very smooth and easy to drink. Big oak, bourbon, and vanilla flavors with a medium body and smooth texture. Quite flavorful and really well crafted.

22 oz. bottle sampled with the group in 2012 from notes. Pours a clear golden amber color with some haze as you get to the bottom of the bottle with a thin white head. The aroma has bourbon, caramel, wheat, fruits, wood, vanilla, a hint of citrus and a splash of honey. The alcohol is present on the nose. The flavor has fruits, bourbon, caramel, vanilla, wheat, molasses with boozy notes throughout. Alcohol is warming. Medium bodied, lighter carbonation, very warming. I need to revisit this to see how its doing.

22 oz. bottle from alexsdad06- thanks again, Brad! Pours a clear amber at first that gets murkier as the lower levels are poured until there is a lot of yeast sediment in the glass. Virtually no head, but the occasional rising bubble can be spotted. Aroma of bourbon, toffee, wheat, dried fruits, wood, and boozy nectar; definitely has some warmth. Flavor of muddled fruits, bourbon, caramel, toffee, wheat, and more booze at the end that lingers and rests in the chest. Medium-bodied, with low carbonation and a smooth, warming mouthfeel. Too fruity for a bourbon barreled wheat wine. Too muddled and boozy without bringing out the distinct characteristics of either the base or the barrel. My instinct is that it would be better with age, but based on the earlier ratings, this is apparently better fresh and maybe isn’t as good anymore. Who knows?

Bottle. This is a very complex beer. Lots of sweet wheat malts and Bourbon in the aroma. However, the taste is sweet and the Bourbon essence mellows out, especially as it warms. I was surprised by this great beer.

22oz bottle - pours like peach ice tea with quickly diminishing head. Nose is bourbon. Flavor is alcohol, bourbon, and caramel. Sweet. Strong alcohol presence. Easy to drink. Thin texture. Bourbon presence eventually lets up.

Bottle sample. Poured hazy dark amber color with an average frothy brown head that mostly lasted with good lacing. Moderate to heavy fruity, wheat, sweet alcohol and wood aroma. Medium to full body with a smooth texture and flat carbonation. Moderate to heavy fruit & wheat sweet flavor with a medium to heavy sweet finish of moderate to long duration. This is a complex standout beer.

Deuce to tulip. Looks good; lighter than a barley wine (as it should). Smells good too; great balance between the beer and the bourbon barrels. Tastes good. Easier to drink than it’s barley wine counterpart. Good on the palate too, although a little hot (which should be expected, as it just came out). Overall, another good beer and even better value from Quaff Bros.
