COMMERCIAL DESCRIPTION
003 Bronze Medal Winner at the International Mead Festival Who said honey wine had to be sweet? Unlike other honey wines ours is fermented to dryness and can be served in place of any fine white wine. Subtle tones of raspberry honey with vanilla, berry and light oak. Well suited to spicy dishes such as curry and other spicy foods.

Bottle from: Whole foods. Visual: light gold. Clear, shallow rim, medium legs. Nose: Acetone, nail polish remover, and oak sawdust. Palate: Light body, extremely over-oaked and nail polish remover. Very little if any honey character. Conclusion: Undrinkable. I have purchased this honey wine from several different vendors over time because I thought there must just had been a bottle defect. I cannot believe a commercial Meadery would release such a poorly made product to the public. I would be embarrassed to do so. If you like the taste of oak sawdust mixed with paint remover this is for you. The description on the back label said, "with a hint of honey." Imagine that, a Mead with a hint of honey? Bottle was not hand numbered and signed as claimed.

Bottle ($14.99). Pours a clear, golden yellow color, with no head but medium legs. The aroma is interesting. Sesame seeds and dates predominate. Cinnamon, cork, cedar continue. Earthy, spicy, persimmon; surprisingly complex! Buttery, complex. Pappy [bourbon, (very) good bourbon] like vanilla tones. I am liking this more with each sniff. Taste is dry, oaky, cork, sesame, lots of vanilla, date and aged bourbon barrel usage. I am surprisingly LOVING this, and I was expecting another mediocre Rabbit’s Foot product. Very dry, very complex. Peppery, like some very fine and expensive wines I have had the pleasure of trying. Pungent and a tad vinous. Thick and weighted mouthfeel. Holy crap, count me as very pleasantly surprised by this one!!!! Overall: a super COMPLEX and bourbon like mead from a otherwise mediocre meadery!

Sampled @ Rabbits Foot tasting room poured a clear gold [still]. Aromas of honey, pepper and some light oak. Palate was light bodied and dry. Flavors of light honey with a hint of grapes and a warming dry finish.

2006 Intl Mead Fest. No head (still). Body is light yellow. Aroma is notes of honey, vanilla, sherry, wood, flowers. Flavor is lightly to moderately sweet, lightly acidic. Finish is lightly sweet, lightly to moderately acidic. Light to medium body, watery texture, flat carbonation, lightly to moderately alcoholic. Yes, it’s a dry mead, and that’s a shame because the aroma is beautiful. The thing is, I just don’t enjoy dry meads (just as I’m not big on dry Riesling). If you do, ignore my flavor/mouthfeel score and check this out. If the aroma of this sample was typical (and judging from the overall average so far, it may not be), I would love it if they would age/oak their sweet mead this way (which I sampled, but did not bother rating as it was quite boring).

Golden color. Aroma was hard liquor, Scotch notes, honey. SMooth and watery texture. Silky. Flavor was a little rough. Alcohol dominates. Didn’t much care for this.

I thought this one was great. Wonderful color with a great woody nose of oak and honey. AT 13% a bit hot but not too much. Wonderfull chilled as they say on the label. My Hubby thought it was like a nice scotch but that must be the oak. Their Sweet is much nicer as is their Pear Mead. But then again it isn’t beer!

Shiny yellow-tinted liquid, no head...paint thinner or maybe freshly painted walls...burning plastic...dry, grapey...Deathly medicinal tasting and down right satanically WRONG! Burnt marshmellows..acidic rubbing alcohol...is this stuff suppoed to be enjoyable??
