This Texas Farmhouse Ale is a traditional Wallonian-style saison brewed with spelt that has been smoked over 4 Texas fruit woods. The use of peach, apricot, apple and plum woods add a subtle smokiness and light fruit texture to the earthy-sweet spelt, and marries well with the complexities of the Belgian farmhouse yeast. Earthy, peppery spice, herbal notes, soft ripe fruitiness and light smoke phenols come from fermenting at high temperatures and create a deep, refreshing character. Highly attenuated for a quenching dryness, this traditional saison is an esoteric seasonal that’s made for the Texas summer months.

Aged 5 months (bottled July 18, 2012, batch 001): I had a few first impressions just from pouring this into my glass, two leading to the third (conclusion) that the yeast was still happy and had some remaining sugars to chew on before the beer went into the bottle. Even after keeping this in the cellar and away from room temperature, this still managed to become and remain highly carbonated. Its bright-white head is extremely airy. There’s also about 3 ounces of thick yeast at the bottom of the bottle, so unless you like to chew your beer you’re going to end up with a short-poured glass. I went the middle of the road and left about 2 ounces in the bottle, still giving myself plenty of thick, caked yeast sediment to float around in my glass. Maybe I’ll let it settle. I’ll give it this... it’s definitely a very well-nosed saison. Yum! It initially pours a somewhat clear and shiny pale orange color, but as yeast sediment from the bottom of the bottle gets loose it becomes somewhat opaque. Its thick, airy bright white head eventually settles to a thin film atop the beer, leaving light lacing. It has a pleasantly spiced and fruity nose with only a hint of yeast. It almost smells like leather. Once in the mouth it seems less like a saison and more like a meaty fruit beer, with definite apple and the subtle smoothness of wood carrying the fruitiness into the dry, estery finish of a hard apple cider. Yes, this would be great in the summer. I, of course, had to wait until the early winter (the first full moon after the winter solstice) to drink this. Even still, it’s good any time of the year.

The beer pours a slightly hazy straw color with a white head. The aroma has some strong yeast notes, as well as some wheat, biscuit malt and a hint of smoke. The flavor is a little different. I get some nice apricot and spelt notes, as well as some yeast and wheat. There was also some spice like I expect in saisons. Medium mouthfeel and medium carbonation. This beer was showing no signs of infection.

Bottle. Dull golden pour with some white head. Nose of fruit, funky yeast, fruit - flavor is spicy and fruity.

Bottle from secret Santa 2012 - blutt59. Pours hazy dark golden color with white head. Yeasty and earthy aroma with some fruitiness. Doughy and fruity flavor with a slightly medicinal finish. Medium body with lively carbonation. Thanks Bob.

GABF, 2012, Friday Evening. Light hazy gold color. Yeast in the aroma and flavor. Lightly spicy flavor as well, giving some fruit flavor. Good.

Bottle, 11/22/2012. Pours dark burnt orange, dense fizzy white head, excellent retention. Aroma is yeast, earthy spices, soft apricot and peach along with other white fruits, mild sweetness, hay, white pepper. Taste is sweet saison malts, a bit metallic, light apple and peach fruitiness, herbal spices with nice subtle smokiness, yeast on the end. Medium creamy palate, dry finish. Really interesting, was pleasantly surprised. A bit more character than the average saison.

Bottle. Pours completely cloudy amber yellow with a large off-white head that mostly dissipates quickly leaving a small creamy residue that laces nicely. Aroma is typical saison with strong yeast and lemon notes plus some spiciness. Flavor is quite smoky, woody, and yeasty, with notes of lemon and pepper. Very light sweetness leading to a dry smoky finish. Medium body, prickly carbonation. Quite interesting, actually.

Poured an amazing hazy yellow with a thin head. Slight spice in the nose but really drinkable. Love all the yeast.

Bottle from Arlington Whole Foods drank in TN. Sweet, wax on the cap...that means you can charge $2 extra per bottle! Big time carbonation makes a huge head. Kinda soapy aroma and flavor. Meh.
