COMMERCIAL DESCRIPTION
This Texas Farmhouse Ale is a traditional Wallonian-style saison brewed with spelt that has been smoked over 4 Texas fruit woods. The use of peach, apricot, apple and plum woods add a subtle smokiness and light fruit texture to the earthy-sweet spelt, and marries well with the complexities of the Belgian farmhouse yeast. Earthy, peppery spice, herbal notes, soft ripe fruitiness and light smoke phenols come from fermenting at high temperatures and create a deep, refreshing character. Highly attenuated for a quenching dryness, this traditional saison is an esoteric seasonal that’s made for the Texas summer months.

Hazy orange color and white med head. I smell pepper, citrus, and fruity sweetness. I taste the same with smoke, yest and orange. Damn nice!

Pours dirty gold with a lasting white head. Aroma of earth, hay, sourdough bread, and pepper. Flavors of earth, hay, sharp cheddar, dust, pepper, and a slight champagne-like quality. Finishes dry and citrusy with a linger earthy funky bitterness on the throat (lemony in the nose). Highly carbonated, it’s too much so to be creamy in the mouth cause it’s too darn bubbly! Otherwise, easy to drink. A damn good take on a saison from a brewery who is pretty new. I expected less, but this is good. Unfortunately, it’s not nearly as unique as all that "smoked spelt over 4 fruit-woods" talk makes it sound.

Bottle from Kegs & Barrels in Plano, TX. Pours a cloudy straw yellow with fizzy white head. Aroma has hints of farmhouse, grass, citrus, just a bit of vegitable and earthy. Flavor is very much the same with a bit more kick that includes a graininess with hints of white pepper and very Smokey. Light-medium mouthfeel with spritzy carbonation. Overall, solid stuff!!!

Bottle thanks to Hopper. Pour is a very hazy copper cold, with a lasting billowing white head that sticks around and leaves nice lacing. Kinda muddy looking with lots of carbonation. Aroma is quite nice: lots of white fruit, light pepper, slightly burnt white sugar, cool mix of phenolics and floral sweetness. Slightly grassy and herbal/bitter green veggies. I actually really dig this aroma, which opens up to a bit more smoke it warms. Unfortunately, the taste really falls flat. Starts with muddled smokiness, moving to flat metallic tones. Fruit and pepper present in the nose just doesn’t come through. Too bad. Slightly thin. Just ok. EDIT: OK as this warms up closer to room temp, the body fills out a bit more, and the pepper and stone fruit is back. Still not great, but not as off as when cold.
