COMMERCIAL DESCRIPTION
This Texas Farmhouse Ale is a traditional Wallonian-style saison brewed with spelt that has been smoked over 4 Texas fruit woods. The use of peach, apricot, apple and plum woods add a subtle smokiness and light fruit texture to the earthy-sweet spelt, and marries well with the complexities of the Belgian farmhouse yeast. Earthy, peppery spice, herbal notes, soft ripe fruitiness and light smoke phenols come from fermenting at high temperatures and create a deep, refreshing character. Highly attenuated for a quenching dryness, this traditional saison is an esoteric seasonal that’s made for the Texas summer months.

375 ml bottle courtesy of Bu11zeye (thanks Markus) poured a clear gold with a large lasting white head. Aromas of citrus, straw, smoke and fruittiness. Palate was medium bodied and smooth. Flavors of smoke, straw, light fruittiness and a hint of spice with a smooth lingering fruity smokey finish.

Yellow pour, white head Odd beer. The smoked wood seems at odd with the saison yeast, a bit vegetal. Not my style.

Pours a nice hazed golden orange color with a large white head. The smoke really stands out on this. There is a bit of saison character underneath the smoke and charred wood. A light citrus quality and tartness, a bit of grass, and some floral and herbal notes. The flavor is also dominated by the smoke. Quite dry and lightly tart. Some charred oak, lemon peel, orange peel, and a bit of cracker malt. Light pepper and herb flavors with just a few hints of sweet fruit.

(375ml bottle) very cloudy light beer, fine white bubbles. Nose of smoke, peach, Belgian yeast, bit funky, apricot. Taste is funky and smoky, sawdust and very woody, dry as hell and some off flavors here. Not great.

9/15/12. 12oz bottle thanks to Walt! Hazy dark orange pour, maybe light amber, with a huge off-white head that lasts forever and laces plenty. Light smoke in the aroma that comes across almost as a barbecue sweetness, as well as sweet, fruity esters, plenty of spicy phenolics, some lemon, and some definite lingering dryness. Light, sweet smoke in the flavor that shows itself more and more as a meaty aspect as it warms with plenty of sweet fruitiness, tangy wheat malt, fruity esters, phenolics, and lingering dryness and citrus.

Murky golden color with lasting off white head. Barnyard dung, dry hay, grass, light citrus aromas. medium body, average carbonation. Nice dry hay, grass, dry spice flavors with mild smoke---good

Waxed bottle sent by a buddy in League City- thanks again, Bryan! Pours a clear golden color with an orange hue and two fingers of foamy cream-colored head. Lots of rising carbonation but no sediment since I poured carefully. Aroma of bready malts, grass, straw, sugar, and overripe peaches. Flavor of spicy hops, sweet and bready malts, pepper, grass, apricot, and a lingering metallic note late. Medium-bodied, with medium-high carbonation and a mouthfeel that starts sweet, becomes metallic, and finishes dry. Sub-par saison.
