Our Brett Venture series is the exploration of how single strains of Brettanomyces ferment and condition a Saison malt bill. Each Brett Venture will be fermented in and aged in wine barrels with a different Brettanomyces strain to showcase its unique characteristics.
Brett Venture #2 With Lactobacillus uses the same saison malt bill found in Brett Venture #1, but is 100% brett fermented with a strain from Drie Fonteinen and aged in oak barrels for 10 months with Lactobacillus.
