Fast schon in Vergessenheit geraten ist das Herstellungsverfahren von Porter. Dieses englische, dunkle, schwarze Starkbier wird nach speziellen Rezepten hergestellt. Besonders die Nachgärung mit der Hefe brettanomyces bruxellens erfordert lange Zeit, das Bier muss reifen. Dabei wird noch Zucker vergoren, welchen eine normale Hefe der Gattung saccaromyces nicht umsetzen kann. Dabei entsteht mehr Alkohol (ca. 10%) als in den stärksten Bockbieren (max 7,5%) herkömmlicher Art vorhanden ist. Besonders geschätzt wird von den Kennern guten Porters die eigene Geschmacksnote der "Brettanomyces". Im Fachjargon wird dieser als "Pferdedeckengeschmack" bezeichnet. Porter ist, wie auch das Stout, ein herbes, hopfiges, schwarzes Bier, an dessen Geschmack man sich erst gewöhnen muss. Nach einigen Gläsern dieser besonderen Spezialität aus der Ricklinger Landbrauerei hat sich die Zunge daran gewöhnt und man möchte nicht mehr aufhören, es zu trinken.
