(3+) Sweet syrupy sugar in the aroma, moderate alcohol presence at first that blows off eventually. Tart apples at the end. Very sweet flavour, light sugary notes, sweet apples throughout turns to a tart very lightly acidic apple finish that lingers in the aftertaste. Smooth syrupy medium bodied palate that coats the tongue. Quite nice.

Sweet caramelized apples, light sherry, brown sugar, and mor rich caramel aroma with ligth alcohol notes. Balance of sweet and sour flavours - apple, maple, caramel, brown sugar, and even strawberry meets cider vinegar, some balsamic, sherry, and sour cherries. Maybe even some soft cheese and leathery touches undermeath the sweet and sour. Full bodied, rich, velvety, but syrupy mouthfeel. Clear, dark amber body with no head. Flavour holds subtly unique sweet apples and finishes tart and kicking. Thick medium body. Quite nice, interesting tart and sweet texture battling each other. Lots of spice and burnt fruit. Similar on the palate - crazy complex plum, cherry, strawberry tartness and rich demerara sugar. I can’t believe how different each of these Raven Ridge varietal ice ciders are. CapFlu (3340), Victoria, British Columbia, Canada Apr 19, 2007 (375ml bottle) Sampled at the CW3 gathering in Victoria. Pours a deep blood coloured. Nose of jam, strawberries. Flavour is shockingly raspberry with sour cherries. Tart and jammy with undertones of port wine and high ABV apple finish. Too sweet and jammy for me.
