Our fourth wild ale is our first with a fruit component. Benedictum was inspired by the brown ales of Flanders. The primary fermentation was accomplished by our house ale yeast. The beer was then racked to barrels and inoculated with a mixed culture of wild yeast and bacteria to finish the job. Toffee notes are balanced by fruitiness and a pronounced acidity. Tart cherries add a further layer of complexity to this very drinkable sour ale.

(Draught) Pours a dark mahogany body with a small beige head. Aroma of cherry, yogurt, caramel, and balsamic. Flavor of caramel, cherry, lacto, and toffee with a dry finish.

on draft a couple of times at Nobi, a few days after their first anniversary party, and i waited .. . deep brown ruby .. solid foam .. . rounded tartness, leather, berry, and tart barrel .. . very well done .. . . Youíll have to speak up, Iím wearing a towel

On tap at Petrol Station. Pours a cloudy brown ruby with small off white head that diminishes quickly. The aroma is oak and cherry skin. Medium mouthfeel with strong cherry, and vinegar with nice sour finish. Really enjoyed this one.

Hazy deep chestnut Amber with a thin white head. Lovely nose with citrus zest and tart funky tones with lovely toffee nutty malts, and a lovely tart sour yeast. Lovely flavor featuring some dark malts, big lacto sour tones, zesty grapefruit flesh, citrus zest, and a little leafy hop tone, finishing tart and funky and delightful.

On tap at Pinthouse Pizza. Deep red pour with an off-white head. I get some big cherry notes as well as some vinegar in the aroma. The flavor is similar with a lot of dark fruit, vinegar, toffee, red grapes and brown sugar notes. Medium tartness. Thin mouthfeel and medium carbonation. Nice Flanders red ale.

(Draught) cloudy red brown, soapy tan bubbles. Nose is mossy, cherry, cellar floor. Taste is insanely good, cherry, cola, light acetic, rich, caramel, perfect carbonation and palate finish.

Draft. Dark brown pour with some light head. Some heavy sour tart fruit, light vinegar aromas. Cherry, oak and tart flavors with some light vinegar tones.

Dang, this is a really good wild sour ale. Its pretty much black in color with really no head and some spare white sail lacing. You see...? The thing is... this isnít annoyingly tart, so it must have been aged well... and, it fell off the high gravity stupid wagon... means you dont have to quit after this one. The aroma is mild tart and the flavor is mild tart, dry and sour while maintaining a body wet enough to not just enjoy, but take pleasure in. Great job Real Ale brewmasterminds!

Tap at Bearded Lady. Pours a dark brown color with a foamy beige head. Aroma is tart, wood, dark cherries, more sour notes. Flavor is sour, dark fruit, wood and oak with cherries. Dry tingly finish. ---Rated via Beer Buddy for iPhone
