Made with Vanilla Beans and Cinnamon Sticks it's a great one for the holidays! A Metheglin style mead made with Honey Base and 2 parts alfalfa honey with 1 part wildflower honey.

My absolute favorite mead from Redstone. Aroma smells strongly of honey and vanilla. Flavor is mild honey (alfalfa and wildflower) thickened by vanilla and balanced with spicy cinnamon at the finish. Balanced toward the sweet side.

Bottle @ Redstone. Golden pour. Nice cinnamon aroma. Vanilla, sugar cookie dough, honey, and caramel. Spicy cinnamon flavor up front. Lots of sweet vanilla. Tastes of sugar cookie dough as well. Plenty of honey, too.

Bottle @ home. Pours a pretty clear golden appearance with no head. Huge cinnamon roll, vanilla, white fruity, sweet dessert, fairly spicy aroma. Moderately sweet, big vanilla, cinnamon, rich cinnamon roll frosting, sweet honey flavor. Really nice drink to share at Christmastime with relatives.

Bottle from State Line Liqours- catching up on old ratings from Oct/Nov 2012 timeframe. This is one of my favorite styles, but I’m not seeing a lot of folks doing it well, unfortunately. This one had a nasty menthol thing happening, that just shouldn’t be there. Disappointing.

It smells just as it should for what it contains. The honey and vanilla stand out prominently with a hint of cinnamon to spice up the flavor. Not that I am an expert on alcohol but in my limited experience this is the best alcoholic beverage I have ever had the pleasure to imbibe. I have had some of the best beers around, not many but some very high rated brews, and I would consider myself a "beer guy" but this meade is where it’s at. The flavor sits with you long after you have swallowed the final gulp and it only makes you want more. I have requested that my not so local liquor emporium bring this in for me and hopefully they decide to keep a stock.

Pour out of bottle was clear yellow, aroma brought big fresh cinnamon sticks, honey, vanilla, and more vanilla bringing an almost cake like quality. Taste is a nice spicy cinnamon, with sweet vanilla and honey mixing into a slightly oaky and spicy finish. I dig this a lot, but could use just a touch less cinnamon.

From a bottle dated Dec 21 2009. Clear sunny gold with an intense aroma. I was getting sweet vanilla cake batter esters. alongside a slightly subdued cinnamon tone. Honey aromas too well mixed with the vanilla tones to be very "honey"ish, but definitely smelled ery sweet and sticky. Flavor was instense and full,. and delightfuly sweet. More vanilla than cinnamon, in fact I found what little cinnamon tones there were to be lacking. But it tasted like boozy vailla-honey cake batter with a touch of cinnamon at the end. Quite sweet with a warming boozy punch. Amazing mead.

(12/21/2007 bottling) - Slight pop when opening. No visible carbonation. Honey yellow color. Aroma is not pleasing, almost menthol-like. Flavor is hard to pin down. Not vanilla, not cinnamon, not honey-like. 12% alcohol clearly makes this more like a wine than a beer. Kind of wish I had bought one of the other flavors instead. (UPDATE: After sitting in my glass for a few minutes the honey notes opened up. Rating adjusted up a bit.)
