COMMERCIAL DESCRIPTION
Made with Vanilla Beans and Cinnamon Sticks it's a great one for the holidays! A Metheglin style mead made with Honey Base and 2 parts alfalfa honey with 1 part wildflower honey.

Pour out of bottle was clear yellow, aroma brought big fresh cinnamon sticks, honey, vanilla, and more vanilla bringing an almost cake like quality. Taste is a nice spicy cinnamon, with sweet vanilla and honey mixing into a slightly oaky and spicy finish. I dig this a lot, but could use just a touch less cinnamon.

From a bottle dated Dec 21 2009. Clear sunny gold with an intense aroma. I was getting sweet vanilla cake batter esters. alongside a slightly subdued cinnamon tone. Honey aromas too well mixed with the vanilla tones to be very "honey"ish, but definitely smelled ery sweet and sticky. Flavor was instense and full,. and delightfuly sweet. More vanilla than cinnamon, in fact I found what little cinnamon tones there were to be lacking. But it tasted like boozy vailla-honey cake batter with a touch of cinnamon at the end. Quite sweet with a warming boozy punch. Amazing mead.

(12/21/2007 bottling) - Slight pop when opening. No visible carbonation. Honey yellow color. Aroma is not pleasing, almost menthol-like. Flavor is hard to pin down. Not vanilla, not cinnamon, not honey-like. 12% alcohol clearly makes this more like a wine than a beer. Kind of wish I had bought one of the other flavors instead. (UPDATE: After sitting in my glass for a few minutes the honey notes opened up. Rating adjusted up a bit.)

5/31/11. 750mL bottle. Relatively clear dark golden pour with no head. Rich vanilla bean aroma with strong honey as well. Rich, sweet flavor with honey up front and big vanilla bean followed by a subtle touch of cinnamon. A tiny touch of medicinal/astringent qualities in the aftertaste.

Tallahassee, Fl - Momo’s Pizza - poured from a bottle. Murky light orange pour - no head. Aroma of honey and scuppernong grapes, nice and sweet. Flavor is that of sweet tupelo honey with some prominent cinnamon accents and a nice vanilla undertone. Not overly sweet and is blended together well. Clean, even mouthfeel.

From bottle at Sunset Grill. Pours clear and golden yellow to orange with no head. Aroma is dense vanilla and sweet. Sweet, slight chemical and aritificial vanilla sweet flavoured. Mild bitterness. Sweet and vanilla finish. Nice though, not overly artificial.

Bottle sampled at the Mead Mountain tasting on 1/8/11. Clear yellow pour. Aroma of honey, cinnamon and vanilla. Flavor starts with the cinnamon up front, then the honey steps in before a creamy vanilla bean finish.

Pours a yellow oily color. Aroma is cinnamon sticks, vanilla and honey. Flavor is overwhelming cinnamon and vanilla beans. Good god how much cinnamon and vanilla did they use. Can’t drink much of this, and while I appreciate the effort the spices were a bit overdone for my liking.

Pours a yellow color. Aroma of vanilla extract. Flavor has some honey and overwhelming vanilla extract with a touch of cinnamon. Mouth feel is watery and fizzy. Overall, not A fan,but I’ll drink it.
