COMMERCIAL DESCRIPTION
In November of 2010, we filled 1 Jack Daniels and 1 Heaven Hill Rye Whiskey barrel with our Barleywine (Institutionalized). The combination of these two unique barrels yield a very rich and complex finished product. Deep aromas and flavors of dark stone fruits, bourbon, molasses, toasted coconut and vanilla come in waves as you swirl this beer in the snifter.

Future releases, especially the first bottle release saw this offering aged exclusively in Woodford Reserve barrels. This is noted for the 2012 December Release, but will not be seperated out.

I tried a sampler of this at the Revolution brewpub in Chicago. Very dark but not opaque and a bit of a light brown head. Smells dark and fruity, mostly of coffee. I was worried that this would be too sweet but it’s not cloying at all. I can taste coffee, bread, vanilla, dark chocolate, and a touch of coconut and dark fruits. Alcohol warmth is very pronounced. All the flavors are very well balanced; I’d definitely get it again.

Bottle. Split with Tom and Shin Tom. Pours auburn copper with furry beige head. Aroma of bourbon, maple syrup, vanilla, and honey. Taste is incredibly sweet honey, bourbon, and dark berries. Palate is surprisingly clean and light, with some smoke and subtle peat in the finish. Pretty good, but incredibly sweet and cloying for my taste.

Bottle split with Pat and Sean Tommy. Pours a cloudy amber with thin, diminishing white head. Nose of toffee, raisin, molasses, licorice, caramel. Medium to full body. Taste is vanilla, bourbon, toffee, raisin, cardboard

(22oz bottle) cloudy orange, tan bubbles. Nose of honey, cream, bourbon barrel, rich and complex. Taste of American hops, resiny, caramel, light metallic, light fruit tartness. Really complex.

My Bottom Line:
Rich caramel malts and their residual sugars slowly sink through the tongue, reaching soulful depths with their vanilla and dark fruit ramifications.

Further Personal Perceptions:
-A sheet of foam tops the cloudy dark amber or pale red.
-Alcohol is not a bother at all, giving some warmth only in the second half of each sip.
-This brew’s mmmmhh factor is sky high.
-The barrel-aging job is intelligent; never brash but rather precise throughout.
-3rd Year Beer and this one are obvious proof that this brewery is to be taken very seriously in any very malty endeavours they undertake.

Bottled in Dec. ‘12, as Straight Jacket Barley Wine.

Clear deep amber brown, nonexistent off-white lacing. Boozy aroma of raisin, bourbon-soaked wood, brown sugar, apple, dates, vanilla, and caramel malt. Spicy carbonation but overall smooth and full-bodied. Solid alcohol presence.

Straight Jacket Barleywine - bottle. Aroma of toasted coconut, caramel, toffee, sweet, medicinal alcohol and richly sweet malts. Dark copper-red in color with a very slight head, and not much lacing to speak of. Flavor profile consists of rich, toasted malt sweetness, dark sugars in depth, along with more coconut, toffee, faint butterscotch, vanilla and hints of oak. Smooth, sticky and warming on the palate, body is exceedingly full. Very nice.

Bottle shared with Nate ! Pours a rich caramel color with a finger of khaki foam. The nose is thick and rich with big chewy caramel, coconut, toffee and vanilla notes that mingle with a trace of earthy leather and boozy spice. Teh palate follows with a big velvety mouthfeel that starts off sweet and complex but slowly evaporates into a clean finish. Some nice lingering flavors remain but the finish is a bit more abrupt than I figured it would be based on the nose and the initial flavor. Overall an excellent beer !

Bottle sampled at a tasting. From notes. Vanilla and caramel with oaky bourbon, dark fruit and a little chocolate. Awesome.
