Our dark German bock is about as true to style as you could ever hope for. We brewed our bock bier back in January to allow for a slow, cool fermentation and plenty of cold storage time so it would be ready to tap for the coming of spring. German malts give this traditional lager beer its beautiful auburn hue and deep rich layers of toasty malt aroma and flavor. German Select hops used in the brew kettle provide a nice crisp, balanced bitterness and spicy flavor without going over the top. This beer is all about the wonderful German specialty malts and lager yeast and we feel we have certainly showcased them prominently here.

Rating from notes. On draft at the brewery. Bright golden pour with a thick white head. Bright, floral aroma with nice crisp bready and dough malts. Flavor is clean, full bodied, rich bready malts with a floral and somewhat herbal hop backbone. Sweet balanced with a nice, nuanced bitterness. Full bodied, pillow texture, nice carbonation. Finishes with a bit stronger bitterness. A nice take on a style that far too few breweries are taking on.

Draft on tap at the Kedzie Avenue Tap Room (Chicago, IL). Pours a nearly transparent golden hue, a bit darker in the body, some gentle amber and oro glow is deep, striking. A frothy whitish head atop is small, sticks around as a loose filmy layer, laces ok. Meh. Aromas show a bit of sweetness, grainy malt, sweeter dough, and cereal elements. Some straw, honeycrisp elements, gentle fruit. A touch of gentle earthy hops and spice. Initial is a bit sweet, firm bready and cereal elements, touch of honey and fruit. Some gentle apple, gentle spiciness as we start to turn the corner. A medium body, perhaps a bit lighter. The middle shows spice, gentle girth. A bit of dryness and touch of toasty malt biscuit as we round the corner. Spiciness, gentle herbal twang that feels out of place. A bit toasty, more dry. Front end was a bit sweet for my liking, but overall seems like a cleaner bock. Drinkable if the flavor suits you well. For me though, it’s not quite up my alley.

On tap at the brewpub. Pours a clear amber gold with a white head that starts at the edges and remains. Flavor has sweet grains, cookie and sweet grains with a touch of herbs and licorice. Flavor has an herbal note with sweet grain with hints of cookie and sweet breads.

On tap at Revolution. Clear golden with a small white head. Good lacing. Aroma of honey, bread, white grapes, nutty. Flavor is caramel, nuts, sweet biscuit grains, fruit, slight booze.

Draft to taster at Revolution. Looks decent; light by Dopplebock standards though. A fairly transparent orange with off-white lacing. Smells and tastes solid; sweet with notes of toasted malt and some Magnum hops. Smooth on the palate. Enjoyable.

A golden helles with a thin lacing creamy off white head. In aroma, a nice malty rye mix with grassy notes. In mouth, a sweet biscuit and grains with loads of alcohol, fruity esters, grains, ok.

draft pour, poured golden with small white head. sweet breads and honey in the nose. flavors had honey, white grape, bread, and slight spicy and floral hop flavor, clean fermentation. a solid bock.

On tap at Logan Square brewpub. Good nutty slightly sweet flavor. Good caramel notes. Deep enough flavor to be true to the style but not syrupy or overbearing. Pretty good.

Had it on tap at Revolution Brewery in Logan Square Chicago. Had a malt aroma with a clear yellow hue with a sour hop taste.
