Gently bubbly golden pour with obvious sediments. Its soft and aged nose speaks of dry oak barrels overtones that itch on the elegant farminess supported by rounded apple, phenols, floral and lightly honeyed flavours. Quite dry, but not without a noticeable dose of residual sugars which remind of other fruit varietals. The body is still well irrigated by bubbly, active carbonation. A convincing effort. Definitely another brick in the campaign cideries are doing to win my heart and an unsolicited extra reason to head to Normandy next year. Thanks Marcus.

Head is initially small, fizzy, white, fully diminishing. Body is hazy dark yellow, bottle conditioned. Aroma is notes of both sweet and sour apples, barnyard/horseblanket, oak, band-aid, pear, honey, lime, dried mango, green grapes, cinnamon, etc. Flavor is moderately sweet, moderately acidic. Finish is lightly sweet, moderately acidic. Medium body, watery/velvety texture, lively carbonation. Holy frijoles...seems this guy did his French homework, and then some...a phenolic, very complex, perfectly balanced, beautifully integrated cider indeed. Drier than Dupont Brut. Fantastic stuff, and surprisingly itís the best cider Iíve ever had. The mind-boggling depth of the aroma (as it warms, it unfolds endlessly with new aspects) and the perfection of the flavor balance (absolutely impossible to stop drinking, and very clean) is nothing short of unbelievable. Iím not even a big fan of Cali wine, but this is positively eye-opening cider. Damn, and I thought that Bordelet was going to be my new top cider over Dupont, but this is the one right here.

UPDATED: JUN 12, 2006 After reading the single review of this cider (by Ernest), I resolved to try some. I discovered that Bill Rhyne is no longer producing cider, but talked him out of a case, which I picked up at his home. This is nothing like the cider I made on the farm in the old days. Bill did his French homework, indeed. The chronicle of all the work leading up to production is very impressive ( trip to France, building equipment, etc.). I will not repeat everything in Ernestís review, which is quite accurate, except to comment that, a year later, all of the noted characteristics are still present, although I expect the carbonation is a bit less lively.

Thanks Blake. Hazed golden color with a small ring of white bubbles. Full aromas with pears, light apple, with a whiff of acid and metal. Thin flavors of apple and pear with a mild backdrop of weed like flower. A touch too acidic and thin for me.

Oaky, mildly farmy aroma offers plenty of sweet apples fresh from the orchard. Opaque golden body with a lot of bubbly carbonation that forms a white head that receded to ring. Sweet caramelized apple flavour with taosty oak and vanilla and a mild lactic touch to counterpoint the sweetness. Medium body with moderate to strong carbonation that perks up the tongue. Bottle enjoyed with MartinT, Olivier_MTL and Rastacouere.

Bottle: The aroma is sweet dusty apple cider with a touch of tart apple as well. It pours a transparent gold with a touch of haze and a large bubbled white head that quickly fades to a ring. The flavor starts with sweet apple cider. It finishes with a light green apple tartness.

I traded marcus for this. The cider pours to a hazy apple/pear juice body. Cola head. The aroma is sweet pears and apples. Nicely blended. The flavor is sweet apples, pears, smooth balanced spices. Champagne dryness atop the sweet fruits.

Pre-GTMW tasting @ 1FastSTiís place. Hazy peach with white head. The aroma is cheesey, horsey, apple, cobwebs and basement. The flavor is apple juice, lemon, bread, slightly tart. Medium body with sparkling carbonation. Funky and beautiful.

Thanks go to Blake for opening this towards the end of the night. It was a
nice change of pace and suprisingly good. Since it is no longer made and
therefore impossible to have again, I wish I wold have gotten more. If all
ciders were this good I might just have to change my style preference.
Aroma / Appearance - Thereís no suprise here. The nose was mostly
apples (honey crisp was the closest I could get to a specific type). Along
with this there were hints of pears and green apples (as in not quite ripe).
The body was a cloudy hazy golden color with lively carbonation and a huge
head which soon faded down into a thin covering.
Flavor / Palate - The taste was a mixture of tart apples (granny smith
and honey crisp) and pears. Very sweet and easy to drink, the 6.8% ABV is
well masked. In fact I could finish a whole bottle of this by myself.
Among the best beers I have ever tasted, not just the best cider. Someone
needs to convince them to make this again.
