To get a subtle smokiness we brew with Scottish peated whisky malt, English pale and roasted malts and boil only whole leaf goldings hops. Querkus is then patiently cold matured over pieces of old French oak barrels. The flavours from the toasted wood slowly seep into the beer; bottling only when we think it is right.

Courtesy of Jaghana. Couleur brune sombre, mousse qui disparait. Nez fumé et chocolat. Gout fumé et chocolat/caramel avec note de café. Corps assez aqueux. Fin de bouche fumée. Pas trop mal, juste corps leger.

Drank from a bottle. The beer has a smoky flavour but it is also a bit watery. With a bit stronger flavours the beer would be great!

Bouteille:Deep ruby amber coloured with a quite stable off-white head, a bit unclear; fruity - astonishingly citrussy - nose with faint traces of caramel and of more roasted than smoked malt, dried berries detectable, too;mild bitter-sweet flavour, pretty light bodied; mild smoky-malty traces in the fruity finish. This "oak" is pretty unharmonic…

500mL bottle BB 12 06 14 Pours a moderately deep ruby body, with a creamy beige head. Subtle aroma of toasted nut, cocoa-y roasted grains, with a touch of earthy smoke character, but not much. Medium body, restrained creamy, almost cask-like carbonation & mouthfeel. More toasted nutty malt character on the body, seems to be the dominant flavour, with some charred meaty roast character, earthy hop leafiness, and faintest of drying Whiskey-like smokiness. Moderate bitterness, dry finish. Not a bad drop really, but the whole smoked & oak aged thing is what drew me in, and it’s just a bit underdone - could easily be overlooked.

500ml bottle. Clear, deep mahogany colour with a beige head. Roast-malty aroma with peat liquorice, and chocolate. Moderately sweet taste with roasted bitterness. The smoke is subtle.

(Bottle). Aroma of roasted malt and coffee. Soft but also a little watery taste of roasted malt, coffee and licorice. Unusually fresh taste to be a "smoked".

Dark, reddish, looks like Coke, big head too. Smoky, caramel. Medium sweetness. Rather fizzy, semi-light palate. A Mediocre beer that is hard to place as a porter or a smoked beer.

(bottle, 4.5% abv) Clear, mahogany colour with a beige and short foamy head. Roast-malty aroma with a whiff of peat, accompanied by notes of liquorice, chocolate and bread crust. Moderately sweet and roasty bitter flavour, light bodied with a modest carbonation. Roasty malt character with notes of chocolate, marzipan and mocha, also delicately sourish accent; roasty and very shy oaky notes during the finish with an aftertaste of chocolate and mocha. Likeable, lacks a bit body. 13.V.14

Ins Glas ergießt sich ein rötlichbraunes Bier mit geringer beigen Schaumkrone. Geruch röstmalzig, schokoladig, Kaffe, leicht rauchig. Geschmack sehr röstmalzig, viel Kaffe, etwas schokoladig, leicht rauchig.
