Taste is malty with sweet raisin, a touch of alcohol but not too hot. Medium body and carbonation. Enjoyable, but not incredible, I thought. Taste was more of the same but lingered with you.. I kinda felt that it was overcarbonated I should have let it age longer, maybe I would have liked it more... I haven’t had too many quads so I’m not sure if I don’t like the style or If I’m not fond of this beer... I dunno just didn’t blow my skirt up like i thought it would. It is a little sweeter and fruitier, the texture seemed even thicker and the whole product, more balanced and of a higher quality. So Rochefort, you force me to lower my St.Bernardus rating! You’ll get that 4.8 now because you are an absolutely outstanding beer, with an amazing depth of tastes that I truly appreciate more than almost any other I had. But you are a he** of an ugly beer with your black clogs, let me tell you that! Smells of light chocolate, with a significant amount of alcohol. Warming reveals stronger scents of chocolate and light yeast, but nothing else. The flavor begins with plenty of dark fruits like plum and raisin, which then switches to chocolate, light wine, and finishing out with toasted malts and an astringent flavor that really lingers well after drinking. bermod (118), Lappeenranta, Finland Apr 11, 2009 Dark dried fruits, apples, very sweet pears and berries in warm aroma. Sweet, dark fruity flavor with raisins, pears, apples, candi sugar and orange peel in the not at all bitter finish. Taste included the same with yeast and roasted malt also. Mouthfeel was creamy, but not oily. Lots of action in the flavors with chocolate, raisins, and some sourness from the yeast. Dry finish. Sugars, some lemon and otherwise not dissimilar to a red wine. Not much malt discernible. Nice but a bit too rich for me.
