Bottle. The pour was a murky medium chestnut brown with an average sized (1-2 finger) light tan head that quickly diminished to a thin cap, which in turn created some excellent sheets of lacing.
The aroma was of a dark bread malt and a sweet Belgian yeast with notes of toffee, a plethora of dark fruit (cherries, plums raisons and figs) and a mild alcohol tinge.
The taste was a mild malty sweet with a good toffee note early on, then becoming a bit yeasty with a big note of dark fruit and a pronounced alcohol finish. The flavor however was short lived fading quite quickly proceeding the swallow, with the fruity yeasty alcohol taste disappearing in what seemed like a matter if seconds.
Mouthfeel was somewhere in the middle of light and medium in body with a slightly dry and a bit watery texture and a soft to medium carbonation.
Overall this is a very well put together Belgian Ale, although this one is a tad lighter than the Trappistes 8 & 10 from this brewer. Now don’t get me wrong, I truly think they are all exceptional brews...

Nose is fruit, caramel and a little smoke. Taste is honey and caramel, grain and cereal, grass, a little licorice and a dash of mint, faintly largerish which is both surprising and disappointing. It has limited depth and a single note.Mouthfeel is a little thin.

Frisk aroma, rosiner. Ravgul, uklar. Sødme og bitterhed, også rosiner i smagen. Lidt skarp, måske pga. kulsyren og alkoholen. Ellers ret rund og harmonisk.

7.5% from the Belgian Beer Weekend bottle shop at 600 yen. Nice amber gold pour with lots of effervescence. Fruity malt aroma with caramel notes. Light body, grain, caramel but kind of boozy for just 7.5%. Not as nice as I expected... Mildly fruity, kind of acidic...

330 ml bottle bought at CitySuper in Harbor City, Tsim Sha Tsui.
Preparation: Bottle rested from the fridge for 8 minutes, then popped at around 12°C onto the Duvel tulip.
Looks: Cloudy hazy deep brown colour with some dirt-like, chocolate colour yeast sediments; Two finger head and off white foam which lasts for about 2 minutes; Very good sticky lacing with active carbonation.
Aroma: Fragrant raisin and dark fruit which can be smelt as soon as it was opened and half a foot away, with dull perfume, rose petals, lotus seeds, light sugar and milk chocolate.
Taste: Sweet malt with plum, dark fruits, light alcohol, cream soda, molasses, light Bel yeast, bitter lime, very light liquorices, and light sharp grass.
Body: Mid to light, with thin but alcoholic and slightly creamy palate.
Mouth Feel: dominated by plum / dark fruits and strong alcoholic undertone. Not too sweet, slightly creamy (as in cream soda) to cover up the otherwise pretty thin body.
Booze: Very much present and quite domineering. Close to screaming, pretty uncharacteristic for a 7.5% Belgian brew. Still on the warming side, but the sledgehammer is pretty alarming…
Hoppiness: Very muted grassy nose, flash of bitter lime and sharp grass to taste. Liquorices is too light to counter the hammering boozy finish.
After Taste: fairly dry, sweet and boozy to mouth.
Comments: The mildest of the Rochefort line-up, yet, like the “8”, it has a very vocal booziness which in this case is glaringly exposed by thin body, simple and not varied tastes, and a really dull perfume and dark fruit aroma. I would like to put some positive spin on this, but the “6” is a sub-par Trappist when compared with good ones like Westmalle Dubbel. Overhyped, but at least I am glad I’ve tried it.

This really is a fine beer, I tried it after having had a few bottles of the 8 (which could well be my favourite beer that I have ever had).
It looks very inviting in the glass, a browny hazy amber colour, initially with a rather foamy head which soon subsides. Smell wise indicates that there is a lot going on with this beer with spicy yeast, dried fruits and sweetness. Taste is amazing, initially a very tasty bread like yeast revealing spices, sweetness, slight clove like notes with various fruits. Ranging from bitter to sweet. It might sound like too much is going on but it really works. The finish continues with the flavours in your mouth leaving you wanting more.

Buen aroma a pasas, color clasico marron con sedimentos de hops, espuma no muy consistente, sabor amargo caracteristicos de las rochefort.

Heller brun med fluffy høyt skum. Skummet sitter i en stund. Aromaen er fristende og forteller meg at jeg snart skal smake en godbit. Her er tørket frukt i form av fiken og rosiner. Malt og gjær også. Smaken er ganske fruktig, mindre av den tørkede frukten her. Nokså tørr, men med mye kullsyre. Følelsen i munnen er god, men den kan ikke hamle opp med storebrødrene sine 8 og 10, og spesielt 10?ern er i en særegen klasse. Dette er dog en klasseøl fra munkene i Brasserie Rochefort. Merk dere spesielt aromaen, den er utmerket!

Couleur ambrée, goûts de caramel, un peu de chocolat et de café, pas trop épicée, pas trop amère, mais très bonne !
