Big head with hazy body. Tasted teh floating yeast with a slight metallic wang to it. While true to type I just can't give it the high marks others have

UPDATED: MAR 13, 2013 Dark brown beer with good sediment making it pour slightly hazy and with a burnt off white head. Drinking it in its own glass adds to the experience. Typical trappist notes in the taste of candy sugar and pear drops but also a slight medicinal aftertaste. A quality brew which satisfys and warms. Still have a bottle of 10 at home to rate and I know how good that is! Score 4.0

Classic Trapiste beer.Very nice and caremel flavour on noise.Nice finish.Very beautifull beer.

bottled: dark brown with some hazy sediment. tan rocky head with sediment here and there. nice nose, spiced apples and sweet malt. on the palate nice and smooth and oily. malty sweet texture with raisin plum goodness. wow, this is nice. cant taste the high alcohol at all. too small of a bottle, not even 12 oz. but damn good and more complex then your old rubix cube. cant wait to try 6, 10, is there a 12?

Looks great. The carbonation puts on a show in the deep brown beer, building the large tan head. There is a nice aroma that seems to share characteristics of malt and fruit. It's a very smooth and well ballanced beer. There is a nice sweetness with tastes of candied fruits like apple, raisin, and plum. Very good beer.

Black in color. Little head. Rich aroma reflecting fruity esters and chocolate malts. The flavor is rich with a hint of alcohol and a slight metalic flavor. Overall extremely well balanced and very drinkable.

Bottled: 19 08 08. Poured a dark reddish brown with a thick biege head. Aroma was mildly sweet and fruity. Nice full and chewy mouthfeel. Dark fruits, raisins, chocolate, brown sugar, spice, and a hint of hops on the tongue. Nice lingering aftertaste. Very smooth and easy drinking for such a complex beer.

UPDATED: MAY 29, 2004 Bottle dated "20 02 07" (bottled February 2002). Really "steamed" as crown was popped. See my rating of Rochefort "10", many similarities. Key differences: 1) Kept me slightly more sober to write this review. 2) Seemed more carbonated and lively on the palate 3) More hint of red in the hue 4)Seemed to have been even more "ripe" (fruits have mellowed in flavor and heightened in aroma), as this sample was 5 months older than the "10" tasted previously. This "8" has the highest production at Rochefort, and I can see why. A product worth driving to get (in my case, nearly 400 miles to Lexington KY). Re-rating leaves a slightly lower overall impression

07 07 04 Poured dark brownish/crimson color with a thin foamy head and some nice lacing. Sweet, fruity, some alcohol as well in the aroma. Dark cherries and chocolate taste. Finished rather spicy (cinnamon) that was nicely carbonated with a moderate alcohol burn.
