UPDATED: APR 13, 2006 Re-rate:- Earlier bottle (21/03/09) making it god knows how old. Speckled chestnut-brown body with a tight, creamy tan head that laced a wicked pattern over the glass. Aroma was similar, but it was much richer in the mouth, almost treacly smooth and well in control flavour-wise. Very earthy, almost nutty and woody with a rich loam top soil flavour to add complexity atop layers of gritty bitter/sweet chocolate and staling musty hops. This is still a pleasure to drink. Long, well rounded, meticulously brewed. Firkin’ lovely. Look forward to my next.
AHHHH, I could be St. Remy’s biggest fan as far as their enchanting beers go! Absolute enjoyment, it’s taken several bottles over several months just to rate it. Poured into its own chalice, around cellar temperature. Deep, chestnut brown; its thick yeast pack dispersing at the end of pouring making it opaque and muddy. Across the glass the very, very fine carbonation raised slowly towards a dense, creamy 1" tan head that remained in its place for the length and left intricately patterned lace down the sides. Rich, yet quite controlled, deep, dark fruit nose reminiscent of aged figs, plums and savoury sultanas. Lightly, bready with a feint roundness of bitter/sweet chocolate and a touch of brandy. Lightly spicy, the inviting aroma preceded each sip perfectly. In the mouth it drifts from the enticing aroma, taking my palate in a new direction, a new journey. Intensely spicy, rich and yet dry flavours of cocoa, prunes, cinnamon and light clove-like spice. Warming alcohol towards the back mingles with pleasantry amongst herbal and grassy, bitter hops before a long, dry and thickly malty swallow. So smooth, it had the mouthfeel of Irish cream Liqueur with the kick to go with it. Liquid bread, nicely balanced and a treat for the senses. Like its bigger and shorter brother this was exceptional. Brown beer with durable big fluffy head. Aroma has ripe fruits, sweet and sour berries and some hops. Taste has ripe fruits, resin, tannin, berries and grape hop flavors as well. Full texture but still not that great. 10 is still better even I didn’t like the after taste in it. Complex beer.

Spiced rum, plums, figs and even bits of bourbon on the nose. Tastes of big, dark, spiced fruits with peppery cloves, bitter skins, malted breads and all kinds of glorious things they currently serve in heaven. A truly blessed beast.

Pours a reddish brown with an off white head that dissipates quickly. Lots going on here. Some spice(like a rum like spice you’d find in spiced rum), dark fruits (plums, raisins, prunes, figs), caramel, light cocoa. Taste is very much the same as the nose. A little sweet but thats to be expected with the higher alcohol content. Finish is spice and some grassy notes. Very well done.

1.5 year old bottle. Dark copper with light beige head that disappears very fast and leaves a nice little island. Incridibly complex: there’s red fruits, dried fruits, rum, spices, milk chocolate, icecream, it just keeps on going. Taste is a great balance: medium sweet, sour touch and bitter cocoa and grassy notes in the aftertaste. Medium mouth, slightly prickly carbonation. My favorite beer so far. Every bottle is slightly different, I prefer the ones that have a bit more chocolate, but this is very, very close to perfection.

12 oz bottle shared pours murky red color with off white head. The aroma is odd dark fruits like plums or maybe figs also get lots of sweet malts. The flavor is incredible. Sweet malt backed by the dark fruit base. Medium body so full of flavors. No alcohol burn to speak of. Sensational beer.

Couleur très spéciale orangés avec des reflets rouge avec un col moyennement mousseux mais résistant. Nez intense et complexes de fruits rouges. En bouche le mélange est complexes tout comme le nez: Cerises,framboises,fraises et plus encore. Une bière très bien construite mais il faut aimer ce genre de bière pour l’apprécier a 100% !

33cl bottle @ home. Pours hazy reddish-brown, massive off-white head. Smells sweet-sour. Aroma caramel, chocolate, fruit, herbs, all moderated. Taste light sweetness, medium bitterness, salty notes. Fizzy carbon, alcohol is quite well hidden, light bitter finish. Easy to drink, lighter taste than I expected, there for it’s not that unique experience, but still an amazing beer.

In bottiglia. Colore ramato carico, schiuma fine persistente ed in gran quantità. Aroma di caramello, frutta secca, frutta rossa, alcoolico, terroso. Al palato corpo intenso, gasatura evidente che non disturba, nota alcoolica presente, birra rotonda, appagante con sentori di frutta sotto spirito, terroso. Ottima
