COMMERCIAL DESCRIPTION
The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

12 oz bottle into a tulip glass. Pours a dark mahogany color, with a massive beige head that persists, leaving excellent lacing. Nose is dark fruit, caramel, and brown sugar. Taste is dark fruit, figs, plums, etc. and a hint of caramel. Finish is long, with a creamy mouth feel and increasing complexity, finally yielding to a pleasant spice note. One of the greatest beers in the world.

Mahogany pour with a large, thick tan head which lasted throughout. Bigger medium body. Hidden abv, but a very pleasant warmth. Yeasty. Modest spice. Caramel. Dried fruit. Dark fruit. Dry chocolate. Complex. Elegant. Superb. Something that can be enjoyed again and again.

Beautiful sweet, strong, fruity beer. Definitely fig, some biscuit or cookie (simply reminds me of a fig newton) dark fruit sweetness, but with just a little bit of lighter fruit mixed in in the aroma. Malt, slight bitterness, just enough to give it a bite and not so fruity.

Bottle thanks to mcbackus...vintage 2006. Mostly clear, dark amber, reddish brown pour with large tan head. Sweet caramel malt aroma, toffee, dark fruits, complex malty goodness. Flavor is vinous, sherry like, some oxidation due to age, dark fruits, more caramel and toffee, finishes with strong alcohol presence.

Bottle @ Bryggeriet, Ystad. Fruity with yeasty and spicy notes, quite sweet with some alcoholic notes, licorice and plums, really complex, medium body with an oily texture. The finish is dry and bitter with sweet and fruity notes.

UPDATED: JUL 17, 2014 The green cap, ’middle’ Rochefort, and to many the most balanced of the three. Stable, mousse-like, nicely lacing head, colour a deep bronze, misty; powerful, fruity and earthy aroma of caramel, banana, coriander, cinnamon, liquorice, pear, cookie dough, brown rum, figues, chocolate, bramble berries; taste kicks off with a ’dry’ fruitiness (dried plums, candied figues), relatively sharp carbonisation with a mineral-like effect, dry spicy hints (coriander) on a deep and ’beefy’, caramel- and lightly chocolate-like maltiness, tingling yeasty spiciness, fairly thick mouthfeel, aftertaste a dry grasy hoppy bitteriness with a warming effect of alcohol (rum, liqueur) but not acerb in any way, some yeastiness and sweetness also lingers, but no cloying so very well-balanced. Also tasted a few times as "Rochefort 8 Cuvée", the Christmas version in magnum bottles, but found no noticeable difference - although a couple of years of aging will probably lead to a different beer in such a big volume than in the normal 33 cl bottling.

Bottle: Clear, light caramel brown, thick head and good lace. Dried fruit, fig or dates, malt, caramel, ripe not roasted. Dry, not sour but almost acid and low bitterness. Almost phenolic. Super attenuated. Loads of weight and length. Chocolate. Almost like red wine pressings.

Really nice tasting beer. Not quite as strong as the 10 but really refined.

Una verdadera Belgian Stron Ale. Aromas a caramelo, pan, chocolate, nueces tostadas. En boca sabores a pan, caramelo, toffe, café, chocolate. Deja un buen retrogusto. El alcohol no se nota en boca ni en garganta.
