COMMERCIAL DESCRIPTION
The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

Perfect roasted brown color. Just before it touches your lips you smell rich figs and raisins. Taste doesn’t disappoint. Immediately the dark fruit sensations hit and last and last. A pretty perfect beer. Maybe a notch below Rochefort 10 but when you’re talking beers this good, it doesn’t mean anything.

Piękne ciemna barwa. Piana znika dość szybko. Wydał mi się mniej treściwy i pełny w smaku niż 6-stka ale i tak kawał porządnego piwa.

330 ml bottle purchased at Julio’s Liquors. Hazy ruby color with lasting head, thick fluffy head that was still in the snifter at the end. Aroma has subtle yeast character, dried fruits and slight alcohol.

The flavor is real complex mix of dried fruits, Belgian yeast, light red grapes, mild figs. Almost a different nuance after each sip. The alcohol is also here with light warming after the sip. Creamy carbonation in a fuller then medium in body. Can’t believe it took me this long to try these! I will be buying a few more to cellar for a cold winter night.

La Trappistes Rochefort 8 es de color oscuro, salvaje y con un paladar pronunciado tirando a afrutado con un final seco. Elaborada a base de dos maltas, azúcar candeal y dos tipos de lúpulo, que se añaden dos veces durante su elaboración, le confiere un cuerpo, con su segunda fermentación, que da una sensación que no tiene descripción.

11.2 oz sloped brown bottle from Wine and Cheese Place, November 2013 vintage, into a tulip glass. It poured a hazy deep reddish amber colour with deep head of spritzy little bubbles, everlasting with lots of fine Belgian lace. Beautiful. Aromas of fruitcake, raisins, sweet bread, cola, freshly cut flowers, rose hips, black pepper, bubble gum, perfumey noble hops and faint alcohol. Grainy and bready flavours, with layers of caramel, toffee, red berries, plums, green grapes, some root beer/kvass traits, somewhat reminiscent of a toasty and chocolatey Scottish ale. Smooth alcohol, no boozy burn whatsoever, difficult to believe it’s nearly 10% abv. Light body but complex well-rounded mouthfeel, strong carbonation splashes all the flavours around. Faintly fruity and spicy aftertaste. Absolutely classic Trappist ale, more approachable and "beer-flavoured", less profoundly spicy than some others examples, but just as complex. Delicious.

12 oz. bottle from Cash Wise in Williston. Appearance: 2 fingers tan-kahaki head that does not last, head lasts as a film, amber color, light cloudy, no lacing to note. Aroma: light plum/fig, rich malt, biscuits, light floral hops. Palate: medium body, alcohol warming sensation and thinness, average carbonation, finish is dry and alcohol. Taste: sweet plum/fig, into a maltiness that lasts, but is partially masked by the booziness that takes over and rides it through towards the end. Overall, slightly thin texture for me, and the booze is not overly well hidden, but I know it is not meant to be. For the style, a little light, but very good tastes and aromas. My only complaint is that this beer is not as rich in the malt as I like my Belgian strongs personally. Very good beer besides.

imilar florals to the 6 in the nose. Denser, though, in fruitcake and especially in alcohol with brandy, chocolate and black cherry. A big but rounded aroma. The alcohol comes through much more on the palate, giving this a fairly muscular character. The fruitcake is rich, the dark malt intensity high

"pours a light-medium murky brown. nice aroma of plum fruit and spice. as with the 6 and 10, it hides it’s 9.3% abv incredibly well. Heavier and fuller than the 6, which was surprisingly light. Medium bodied and smooth as snot on a glass eye. flavor mimicked the aroma once again. Very nice beer."

330ml bottle served in its own chalice. A: Pours a dark brown color with a medium dense and creamy beige head. Particles floating around. Medium to low retention and some nice lacings left in the glass S: A little bit less complex than the 10 but still quite fruity and bready. Strong notes of raisins and plums. Candy sugar. Caramel malts and earthy Belgian yeasts T: Sweet and fruity upfront. Notes of chocolate biscuits, candy sugar, malts, Belgian yeasts, brown bread, candy sugar. Nice hops profile, not too bitter. A bit boozy M: Full creamy and molasses body. Reasonable carbonation. Belgian-style bittersweet aftertaste O: Absolutely drinkable. Simply delicious. A winner, ever! [ BA Review @ 11/18/2009 ]

a sweet, spicy taste and aroma, and you have to love the way those tiny bubbles just sit on your tongue. Unfortunately it disappeard way too fast and only left me wanting more (too cost prohibitive), we must pay homage to those trappist for continuing to produce such fine quality beer!
