COMMERCIAL DESCRIPTION
The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

UPDATED: FEB 5, 2015 Bière brune aux reflets rouge-orangés, totalement opaque avec particules bien visibles, très effervescente, et surmontée d’un bon col brunâtre, bien large, très dense, très mousseux, et qui semble éternel. Arômes principalement de fruits foncés bien mûrs voire confits (raisin, cerise, datte, prune/pruneau...) avec beaucoup d’effluves sucrés (pâtisserie, caramel, cassonade, cola, érable…), d’abondantes épices (anis, clou de girofle, poivre, muscade…), de la vanille, du malt fumé, du boisé, de la tourbe, du pain grillé, un peu d’alcool, notes de levure belge… Ce breuvage sent merveilleusement bon, incroyablement complexe et parfaitement intense! En bouche, c’est bien pétillant sur la langue avec une onctuosité intéressante au palais. Au goût, abondantes saveurs fruité (raisin, cerise, prune, datte…), du pain grillé et des sucres (on est dans le caramel, cassonade, cola… avec des notes bien évidente d’érable!). Mais c’est loin d’être trop sucré, le malt étant admirablement bien équilibré par les épices, la levure (légère acidité) et les notes de vanille, de malt fumé, de boisé et de tourbe. Il y a également pas mal d’alcool en bouche, peut-être un peu trop. Aussi, une amertume plutôt légère mais tout de même bien sentie se pointe en finale, mais cette dernière se veut surtout alcoolisée. Toujours bien intense en bouche, mais peut-être un peu moins complexe qu’au nez, il s’agit d’un gros coup de cœur pour moi. Je ne me tanne jamais de ce divin nectar brassé par d’authentique moine trappiste!

Light hazy brown, thin ring and no lacing. Initial taste bright brassy sweet, caramelised lemon and throws back crisp brassy malt. Sweeping squeaky mouthfeel. Keen citrus, gummy lime on the backend. A nice stop gap and juicier than I remember. 2010 Vintage.

11.2 oz bottle, poured into an oversized wine glass at ~40 degrees F. Appearance: Pours an almost opaquely murky red-brown, like a dingy bronze metal. Forms a relatively thin head of almost-white bubbles, which dies fairly quickly into a ring and a patchy cap. Lacing is adequate, somewhat patchy islands which slowly sink back down into the body of the beer. Smell: Sweet candi sugar entwined with caramel and toffee wells out of the glass, bringing along some very faint hints of what might possibly be fruit - banana, raisin. Taste: Caramel and toffee swirl to form the core of this beer, with slightly sour cherries filling in the lines where they twist together. Raisin and fig can be found as well, playing along the edges, with occasional cameo appearances by some faint banana notes. There is a sharp edge to the flavors, courtesy of the carbonation levels, but no real alcohol heat involved. The finish leaves behind a lingering ghost of caramel and bread. Mouthfeel: This beer is loaded with incredibly prickly carbonation, and is quite lively indeed. Beneath the carbonation, there’s a creamy, medium-bodied beer. Overall: A tasty, tasty beer.

Bière brune au-dessus de laquelle flotte une atoll blanc cassé entouré d’un mince anneau blanc de la même teinte. Nez très sucré de figues, de dattes marocaines fraîches, de sucre d’orge, de fruits confits. Des épices également mais rien d’agressif; ces épices sont douces et légères. En bouche j’ai l’impression de manger de la pâte à biscuit aux brisures de chocolat avant la cuisson: c’est moelleux, sucré, décadent... Des fruits noirs viennent ponctuer ce mélange sensuel au bonheur de mon palais admiratif. Longue, ronde, fruitée, sucrée et légèrement épicée, cette bière est une parfaite représentante du style! Même si ce style n’est pas mon préféré, rendons à César ce qui appartient à César - cette bière est une Grande parmi les Grandes de ce style!

WYGLĄD: Barwa ciemno bursztynowa, klarowne. Piana mydlana, z wysokiej do bardzo niskiej - krótka.
AROMAT: Intensywny. Bardzo kompleksowy. Są charakterystyczne zapachy suszonych owoców (morele), podbudowa słodowo-alkoholowa, nuty korzenne, przyprawowe, kwiatowe oraz ziołowe.
SMAK: Wytrawne. Słodowo-alkoholowe. Posmak korzenno-ziołowy. Goryczka średnia - krótka. Dobrze "ukryty" alkohol.
OGÓLNIE: Świetnie zbalansowane i dostarczające sporych wrażeń smakowych i sensorycznych.

Pours a hazy, orangey dark amber with large, dense tan head that reduces very slowly but eventually leaves skim rather than lacing. Despite the large head, the aroma is enormous: nuts, figs, rum, malt. You don’t have to drink this beer to enjoy it, just drink it in. The taste builds on the nose, with chocolate, chestnuts, dates, pepper, bread, raisins, oak, vanilla. The carbonation adds a creaminess that serves to clear these various notes, letting them stand out in turn and leads to almost neutral yet warm finish, less dense and sweet than its monumental sibling, number 10. The 9.2 ABV suggests care should be taken, though it is not debilitating. But this is built to top off a meal, a liquid dessert, and makes a great finish to an evening.

330ml bottle, pours a cloudy chestnut brown. Interesting nose; rum, chocolate, figs, dates, chestnut puree. Taste is incredible and difficult to describe without including finish. Briefly sweet and deeply malty but the carbonation lifts this away almost instantly, then a gentle wave of warmth slowly comes in bringing back the flavours of chocolate, mild oak, some nuttiness, sweet sticky fruit- dates, raisins, figs. Superb.

Pours a dark brown color, topped with a nice looking beige colored head. Aroma of yeast and cellar at first, some more pleasant notes of dark fruits and some grapes. Taste is better than the aroma. Sweet start, a bit chocolatey with medium bitterness following it. A bit more creamy. Not my favourite style in general.

Aroma: Caramel, raisin, drop, chocolate, fruity. Appearance: Darkish brown, starts with a huge off-white head and ends with a nice steady one. Taste/Palate: Caramel, raisin, drop, chocolate, fruity in the end. Sweet from beginning till end, but still has a bitter taste woven in it. Overall: The taste is slightly more sweet and softer than that of the darker 10, but still very good!
