COMMERCIAL DESCRIPTION
The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

Pours with a beautiful full-inch-up tan foam that fades into a crater filled surface of bumby weird whipped cream with eiry leftover laces coating the sides. The glowing amber red lake sits murky, yet crystal clear around the edges. The aroma hits with a grainy goodness like fresh cooked homemade bread straight out of the oven with a fresh steaming cup of coffee on the side, but in way that makes you want to stick your face straight into it. The dance that executes across the tounge is amazing. This is no mere beer; this is a masterpiece. A finely crafted delicate dance of malt, yeast, and hops that emphasizes none before the other, but combines them in a refined balance of spice and caramel mellowness. Aye, Mother's milk, nectar of the Gods, may ye find this nearby and often.

Deep & dark ruby / reddish brown color with beige, tall and unsustainable head. Aroma of dried fruits, burnt sugar and some malty and woody notes. Taste of toasted bread, spices and candied fruits. Alcoholic aftertaste. Earthy and herbal notes. Really nice.

Bottle 33cl. Brown colour with small creme head. Deep sweet aromas which remind me of sugar and caramel. Taste has sweetness too, but it’s also a little dry. A lovely bitterness is in the aftertaste.

Con un extraño aroma a madera y humo se presenta esta cerveza de color rojizo muy oscuro, y una maravillosa y casi perfecta espuma cremosa que persiste lo suficiente, dejando a la cerveza con un aspecto bellamente turbio y oscuro. La primera impresión en boca es nuevamente humo y mucho cuerpo, con sabores a especias picantes, caramelo y un dulzor agradable. El alcohol deja su presencia discretamente para mezclarse en equilibrio con la madurez del sabor. Un final casi imposible de olvidar que se mantiene largo tiempo y deja una sensación de cerveza con mucho carácter.

Bottle. Pours a deep, dark amber with a light beige head, a bit of retention. Definitely closer to the Rochefort 10 than to the 6. Lots of dried and candied fruit notes in the aroma, like a holiday fruitcake. Flavour is less sweet than the aroma, with a touch of bitterness and citrus added to the mix. Fairly full mouthfeel with a dry finish. A beautiful Belgian.

Fresh batch bb07/2019, Colruyt 6-pack + aged versions 2012-2013. Refined, but not overly complex dry suada of candied raisins, dried berry sweetness and earthier dates briefly punctuated by metallic aniseed and fruit pit. Taste when fresh is manageably dry-sweet as well, between older tawny port and on occasion more like roasted bread-dunked hot milk chocolate. More earthy, herbal and nutty flavours (roasted chestnut) take center stage with a few months of age, the yeast breaking through the thick layers of potentially manifold desserts, laying bare a unique and supremely drinkable beer at the top of a recipe for a sipper and Flemish carbonade classic.

11.2 oz bottle. Pours a dirty brown. Head is white and dissipating. Aroma is overripe fruit, cola, toasted grain and molasses. A woody and fruity profile. Really interesting, great depth. Finishes on the roof of the mouth with fig and raisin.
