The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

The bottling code on this one was L050912 08:21, indicating a bottling date of September 2007. The 9.20% ABV beer poured a dark (rootbeer) brown, and even with an easy pour developed a thick foamy beige head. Lots of sticky lacing is left as the head drops. The aroma has notes of banana, clove and yeast. The taste of the Rochefort 8 is malty and complex, with hints of vanilla, milk chocolate and brown sugar. There’s a slightly bitter aftertaste though the beer finishes cleanly leaving little behind. The mouthfeel is highly carbonated.

UPDATED: OCT 17, 2016 Nottle. Color: Very dark, bit hazy ruby brown. Dense frothy off white head. Taste: Sweet dark roasted malt, ripe red fruit, hints of grain, yeast, sugar and cocoa. Well balanced. Full body, soft carbonation. Long bitter sweet finish.

33cl bottle at home. Pours a dark brown colour with tan head. Aroma of malts, cocoa, burnt sugar, fruity ester. Taste is fairly sweet, medium to light bitter with a roasted-like finish. Notes of caramel, burnt sugar, cocoa, malts, plums, slight hops. Texture is oily to sticky, medium bodied with medium carbonation.

Bottle. Pours dark brown, as in an extremely dark amber, with a beautiful fluffy tan head. Aromas are complex, with currants, malts and a general dark chocolate-cocoa like background. Full body, beautiful, with a well hidden alcohol. Malts dominate the finish, some sweetness with the fruity notes (peach, plum!) perfectly balances it. The flavour profile is very complex and developing, very well crafted. Long finish: some caramel and a little hop resin can be perceived as well as the more obvious fruitiness and malt. Nice, but I want to re-rate from a different batch soon. I feel like there might have been something slightly off.

330 ml bottle. Big creamy head. Finish brings out some burnt flavors and even dark chocolate. High alcohol level is well balanced and precisely set on the right line. Pretty great Trappist beer.

UPDATED: OCT 11, 2016 Pours a deep hazy brown from the bottle with fluffy tan head that dissipates to leave good lace. Aroma of dark Belgian fruity esters and burnt sugars. Taste follows, hint of caramel and molasses. Impressively easy to drink for the abv, feels light as well, but really flavorful and awesome.

Il colore di questa birra è marrone, la spuma è fine e compatta, a bolle molto piccole, persistente. Il naso, all?inizio, ha un che di agrumato, netto, e nel complesso dimostra una forte caratteristica fruttata, spiccata e quasi sciropposa, con una evoluzione maltata, molto caramellata. Nonostante i 9,2°, questa 8 rivela un corpo importante, ma non eccessivamente consistente, con un impatto piacevolmente frizzante. Il sapore iniziale ricorda la liquirizia, con spezie in secondo piano, e una corsa finale morbida e calda. Lascia il palato particolarmente pulito, con una sensazione finale decisamente secca e amara, che avvolge tutto il palato stesso e i lati della parte finale della lingua.
