Created for our Brewmaster’s wedding day, this Belgian-style Saison was designed and brewed by the happy couple in celebration of love, life, and yes, BEER! Chosen by the Bride-to-be herself, wild honey, German Pilsen malt, Belgian yeast, Juniper, and Coriander were used to create a fun, crazy, and exciting ale, much like the Morris-Crowley union! Be sure to hoist a pint for us as we will surely be hoisting a few for you!

On tap at the brewpub on 6/20/07: Pours a slightly hazy bronze copper with a thin-lacing white head. Slightly sweet earthy caramel malty nose has some floral hop balance. Body starts fairly full and toasty earthy caramely sweet with a touch of biscuity Belgian malt toward a drier, authentic bready finish. A pretty decent saison.

GABF 2007. 55 IBUs and 5.5%. The beer pours to a thin gold body that is extremely watery. A thin creamy white head. The aroma is spot-on-Saison-duPont. Yeasty, clean grains. The flavor is tart, yeasty, with tons of saison qualities. Grains meet yeasts. Tart. The palate is dry, refreshing, and tart. A superb saison. Creamy light mouthfeel. I had a bunch of this beer.

Light amber pour, lite white head. Traditional yeasty aroma, light white peppers and honey w/ hints of what i’m told are juniper berries. Avg pal. Odd sweet juniper a touch of tart in the finish and a hint of clove. I’m not a fan of this beer.

hazy yellow, fine white head, drops of lace, sweet fruity aroma with a spicy funk, flavor follows the aroma perfectl with a fruity malt flavor balanced by a spicy character, light funk adds complexity,

Sampled at RB in downtown Chicago. Pretty sure this is the first Saison I’ve ever tasted and I was pleasantly surprised. Spicy aroma, the juniper and coriander were definitely noticeable and well done. Sweet and tasty beer.

Draft at the brewpub. Poured a clear golden-orange color. Head was thin, white, and fizzled quickly. Smelled of clove and yeasty bread dough. Spicy on the tongue with banana and clove flavors. Not outstanding, but pretty good.

on tap at RB Chicago. poured a hazy yellow with a short lived white head and not much lacing. beers brewed with lots of honey have never done much for me, but this was an exception. floral and spice on the aroma with flavors more of the same with additional notes of pepper, juniper berry and some coriander. I’m no expert on this style, but I found it pleasant and refreshing.

On tap at RB - Chicago. Poured a hazy, medium golden with a short cap of white head. Aroma found spicy white pepper and coriander first with sweet floral and lighter caramel behind.. rather complex and interesting. Flavor found a blend of pepper and coriander spicage with sweet toffee and floral at the base.. spicy finish with very good balance all around. About medium-bodied with nothing really memorable on the palate.. some sweetness and some spiciness.. but only a decent flow. Enjoyed it overall.
