On tap at the RB Chicago. Pours a clear copper yellow with a creamy beige head. Citrus, grapefruit, and pine in the aroma. Creamy malt and fruit flavors. Citrus, floral, pine, and grassy. The citrus light hop bitterness jumped at me at first. But it quickly became boring. This needs more hops and bitterness to make this something good.

On tap at the brewpub in Chicago. Pours a clear golden color with a medium white head. The aroma is sweet citrus and floral hops. The taste was basically a juicy batch of citrus hops, full of flavor, only a hint of bitterness. Quite nice.

On tap at RB Chicago. Almost clear, light amber body with medium white head and lots of lacing. Very fresh hop aroma, lots of citrus and only a slight amount of sweet caramel body. Fresh citrus hops with nice caramel malt in the back, a little grassiness over the medium sweet malt as well, very nice. Medium body and nice carbonation. Very nice, fresh IPA, a winner.

Pours a cloudy gold with white head. Very nice aroma of grapefruit and a lot of other citrus and other fruit. Nice bitterness, great flavor. I really enjoyed this one.

UPDATED: JUN 18, 2010 on tap at RB Chicago. this version was listed as dry hopped with over 50 lbs of Amarillo....pours slight hazed light golden with white head. aroma is dang hoppy, citrus, pine, peach, and apricot. flavors are rather bitter, citrus, pine, apricot. wow pretty high level of bitterness here. nice ipa and one of the better RB Chicago IPAs. 3.7.
7/24/08, so about 2 months after this Amarillo hopped version was tapped it clearly has shown signs of loosing its bitterness edge. still wonderful hop aroma and flavor but not very bitter anymore. still nice though. 3.5.
6.17.10, Rb chi, Chris Rafferty version, American dream ipa 100% Amarillo, pours hazed dark gold white head nose has lots of floral and citrus hop notes, fl is sharply bitter and citrus forward, sweet malt somewhere back there, pretty tough to drink as it is, perhaps too fresh or just too bitter and off balance lacking good hop flavor and dry hopping. 3.3.

The look: Partly cloudy yellow body
In long: Nose is very aromatic with foresty and grapefruit aroma. Smooth malt profile with a mashed raw cereals flavour. Not much in the way of sweetness flavour except maybe a distant honey. Coniferous blends in with a lemon muffin sensation. Short bitterness of medium intensity. This is a decent beer but when I order an American IPA I want to get a hop-fix and that wasn’t the case with this beer. I don’t know what Shimkos taste like but it probably had more of it than Simcoes.

Draft… DLD’08…Cloudy, straw-colored ale with a mid-sized, creamy, white head. Great retention and solid lacing. The nose offers big notes of pine, medium notes of yellow grapefruit and an undercurrent of toffee. Medium-bodied with a whole-milk mouthfeel and lively carbonation. Nicely balanced juniper and grapefruit flavor. Crisp, bittersweet, citric finish.

Amber color with an off white head, nice lacing. Super fresh fir tree sap hoppy aroma. Medium body with a smooth mouthfeel. A smooth bready malt flavor is quickly overtaken by that fresh fir tree sap, cannabis bud hoppy sweetness. Finishes a bit on the dry side. Very nice IPA here. Draft 7/07/2005

On tap at R.B. Chicago. Poured a hazy medium peach with a tall, well-retained thick beige head. Must’ve been some Simcoe in there... juicy grapefruit and apricot in the nose along with lesser caramel and pine... quite sweet overall. Juicy fruits again in the flavor department (pear, grapefruit, and apricot)... backed by malty sweetness (not sure what exactly) and surrounded by aggressive pine bitterness. Smooth at the core with the aforementioned bitterness... left a fine bitter fruity impression. Well done, KARL!
