COMMERCIAL DESCRIPTION
Double Imperial IPA with a pine hop aroma and flavor with a balance of malt. Double dry hopped with a total of 25 pounds of hops in a 5 barrel batch. Brewed especially for our 5th anniversary.

Amber with a small head. The aroma has a lot of pine, some grapefruit, and a touch of pineapple along with a big caramel presence. The flavor is sweet upfront, with a lot of hops following. and enough malt to keep it in check. Pretty bitter finish with some alcohol warming.

22 oz bottle from the source (Orland Park, IL). Pours a rich amber hue, some fiery glow and gentle haze hit the body, offering a frothy offwhite head atop that dies to a film and laces ok overall. A fiery amber glow with some orange notes hits the eyes. Aromas are fairly pine and earth forward, offering florals and resin, touches of citrus and some mellow pale and sweeter biscuit and toffee driven malts. Bitter, but not complex. Initial is pine and florals, offering a touch more citrus, grapefruit and lemons appear with touches of toffee, bread, and toast. Gentle biscuits, more grass and bitterness, giving a touch of malty body to give a feel for the "bigness" of the beer. ABV surprisingly stays well hidden for something so big. Backend remains bitter, dry, and hoppy. Touches of toast, dry bread, and a boatload of piney and floral hops stick to the palate and linger on. Overall, it’s not complex but it does work from a taste perspective. Malt body stays in check, but gives enough life to carry it a bit. Aroma is a touch lacking in oomph and complexity, but taste and palatability are on. Pretty nice.

Cornfield (5544) - Oak Forest, Illinois, USA - APR 11, 2012
I was surprized that this was still available last visit since it was a smaller batch and some of it was bottled. It poured a deep amber body, slightly hazed, with a pale yellowish-tan head. The aroma was piney with a slight touch of cattiness over over some juicy fruits. The taste had a touch of caramel to it, just enough of a malt backbone to keep the flavor from flipping completely over to the hoppy side. Nice pine with a bit of citrus and a solid bitterness. The finish was dry, as is true with most of Iain Wilson’s brew, with a pleasant bitterness. Happy Fifth Anniversary!
