Just now found my notes for a couple of beers at RBY that I didnít get around to entering here. Light brown body, a bit opaque. Belgian specialty malt and a spicy nose. Taste is a little dry up front. Then thereís a slight plum note informed by black cherry. Aromatic malt taste, and some sweetness like an alcoholic cordial,

Draft on tap at the brewpub (Lombard, IL). Pours a rich glowing amber honey brown hue, healthy glow, some light haze and a frothy tannish head atop. Dies to a small layer, laces small. Aromas are caramel and gentle apple sweetness, touches of biscuit, mellow spice, brown sugar, and mellow yeasty spice. More apple, pear, and gentle touches of heat. Initial is medium bodied, a touch lighter with firm sweetness tapering out up front. Caramel, toffee, biscuits, gentle carmelization, light brown sugar. Touches of apple, mellow yeast, spice, as the middle thins out more instead of getting sweeter, a touch of heat into the middle. Backend gives some tart tangy apple, sweetness, touches of dryness, spice, carmelized malts and gentle toast, biscuits, mellow spice. Not my jam as far as styles, tangy apple as compared to a more preferred toasty and darker malt influence. More of a summer dubbel with lively fruit intertwined with toast, carmelized malts, and toffee, gentle spice. Not bad.

On tap at the Lombard, IL. brewpub & restaurant, and dispensed to a thick goblet/chalice with a hazed, brownish amber, a modest layer of off white head foam that diminished quickly to a thin ring & film, and left some spotty lacing on the glass. The aroma was lightly toasted, subtle, currant-like sweetness, a hint of banana, caramel, and maybe a touch of vanilla. The flavor was similar notes, adding fairly lively carbonation, subtle but vigilant alcohol warmth, in a little better than medium body. The finale presented a pleasantly mellow dryness. A little lighter texture and body than many Dubbels that Iíve sampled, but nicely constructed and suitably flavorful nonetheless.
