Bottle. Poured cloudy golden color with a large frothy off-white head that lasted with excellent lacing. Complex woody, citrus, whiskey and yeast aroma. Medium body with a smooth texture and soft carbonation and thin particles. Medium to heavy whiskey complex flavor with a medium to heavy complex sweet finish of moderate duration with a small alcohol bite. This is a refreshing standout beer.

750 ml corked and caged bottle poured a hazy golden yellow with a large lasting white head. Aromas of whiskey, straw, pineapple, oak, light vanilla and light spice. Palae was medium bodied and crisp. Flavors of straw, pear, whiskey, oak, light vanilla and light spice with a crisp lingering fruity finish.

Sample at Ale Wine & Spirits in Powell on 10/20/2011. Pours a hazy orange-gold color with a medium bubble white head that diminishes steadily. Sticky patches of lacing on the glass. Aroma of oak, yeast, malt and fruit. Full-bodied with a ripe fruity character and a subtle whiskey base. Notes of peppery yeast and malt in the background along with some sweet spice. The finish is well-balanced between oak and fruit. Overall a very enjoyable beer.

Sampled at GonzoIllini’s Birthday Party (Western Springs, IL). Happy Birthday, Tony! Pours a richer hazed golden yellow hue, touch of darkness, frothy whitish haze as a firm ring, laces well and sticks around. Aromas are sour lemons, yogurt, and straw. Bready and dough, some touches of yeasty dryness. Banana, apple, tartness. Touches of wet oak, gentle spirit. Initial is dry and a touch clove ridden up front, spice adnd coolness, gentle yeast, apple, yogurt, coolness. Mellow sweetness, spice and an herbal quality overall. Touch of menthol, coolness, mellow spirit grows, dryness comes in through the middle and backend. Touches of straw, pear, and spice. Pretty nice, a bit more vibrant up front trailing into a mellow dry and spicy backend and finish, perhaps focusing more on barrel and the spirit there. Solid.

Bottle from Belmont Party Supply, Dayton. Glad to have picked this one up, as the particularities of heavy, sharp American tripels seem to go naturally with barrel-aging (see Mother Earth’s for a similar success story). Handsome pale orange pour, cloudy and bedecked with a mighty head. Very prominent wood in nose and taste, verging into coconut/wheatwine territory. Fruity and ripe yeasts too, big beer, fairly well done.
