COMMERCIAL DESCRIPTION
Our traditional Tripel was aged in Middle West Spirits OYO Whiskey Barrels. This limited batch Tripel reveals the beauty of working together.

750 ml caged and corked bottle. Served in a DFH Signature Glass, the beer pours a very cloudy golden/orange color with a huge frothy off-white head. There’s also a good amount of lacing. The bottle was a slow gusher when it opened, and the head on this brew continued to grow after first pouring it into the glass. It took a little while for the brew to settle down before I started drinking it. Aroma is mostly fruity, the brew smells like pears, peaches, whiskey, peppery spice, honey, and some tropical fruit. It tastes like pears, yeast, peppery spice, whiskey, honey, peaches, and a bit of apple and toasted coconut. The whiskey flavor is quite smooth and works well with this beer. Mouthfeel/body is medium/full, it’s a bit slick and syrupy, and it has high but soft carbonation. It’s also easy enough to drink. The barrel aging sure hasn’t hurt the Tripel at all. I’m a big fan of the regular Tripel, and I really like this Cask Aged version too! Hopefully Rockmill will decide to make another batch of this sometime in the future.

Sample at Ale Wine & Spirits in Powell on 10/20/2011. Pours a hazy orange-gold color with a medium bubble white head that diminishes steadily. Sticky patches of lacing on the glass. Aroma of oak, yeast, malt and fruit. Full-bodied with a ripe fruity character and a subtle whiskey base. Notes of peppery yeast and malt in the background along with some sweet spice. The finish is well-balanced between oak and fruit. Overall a very enjoyable beer.

Panzuriel (1283) - Westerville, Ohio, USA - DEC 23, 2011
This amazing beer pours a cloudy honey golden with a very thick head of off white lace. Nose has hints of oak, whiskey, honey and floral hops. Deep and rich complex flavor that starts out with bourbon like notes, broadening into a more tripel style with decent hops and a slightly sweet middle. Finish is warming, alcohol evident. Toasted oak presence with carmelized sugary honey/brown sugar flavor around the edges. Very deep and complex beer. Very awesome.

750 ml bottle into chalice, bottled on 3/18/2012. Pours moderately hazy golden amber color with a 1 finger dense off white head with good retention, that reduces to a thin lace cap that lingers. Light spotty lacing clings around the glass, with moderate streaming carbonation. Aromas of big pear, apricot, grape, apple, lemon, peach, clove, pepper, candi sugar, light honey, bread, herbal, oak, light vanilla, light whiskey, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast and malt notes with light-moderate barrel presence; and good strength. Taste of big pear, apple, apricot, grape, peach, vanilla, toffee, candi sugar, oak, clove, whiskey, pepper, light honey, bread, herbal, and yeast earthiness. Lingering notes of pear, apple, apricot, lemon, peach, vanilla, toffee, oak, candi sugar, clove, pepper, herbal, bread, whiskey, and yeast earthiness on the finish for a while. Fantastic complexity of fruity/spicy yeast, malt, and whiskey barrel flavors; with great balance of malt/yeast/barrel flavors and zero cloying flavors after the finish. Medium carbonation and medium-full bodied; with a slick, smooth, and slightly syrupy mouthfeel that is nice. Alcohol is very well hidden with only a small warming present after the finish. Overall this is an awesome barrel aged tripel. All around great balance and complexity of fruity/spicy yeast, malt, and whiskey barrel flavors; and quite smooth to sip on for the big ABV. A highly enjoyable offering.

Bottle. Poured cloudy golden color with a large frothy off-white head that lasted with excellent lacing. Complex woody, citrus, whiskey and yeast aroma. Medium body with a smooth texture and soft carbonation and thin particles. Medium to heavy whiskey complex flavor with a medium to heavy complex sweet finish of moderate duration with a small alcohol bite. This is a refreshing standout beer.

RBWG14 Trip Rating #152. Bottle shared at the Grand Tasting. Pours a slightly hazy amber color with a thin tan head. Decent head retention. Aroma of bready malt, butterscotch, mild candied fruits, mild hops. Taste is stone fruits, bready malts, spice. Medium bodied, lightly boozy.

Huge popping gushing, barely got the cage off before the cork was denting the ceiling! The aroma brings the sweet tripel notes first and then sweet whiskey notes come in somewhat potently. The flavor is similar, but the whiskey comes in quite potently on a champagne like body.

750 mL bottle supplied by Drsilverworm -- many thanks! Consumed alone in front of some dumb Elizabeth Rice movie. Ended up scrapping that idea and drank the remainder of Rockmill’s CAT outside on a beautiful 74° F afternoon with my dog by my side. It took a lot of energy to remove the cork, however, but it wasn’t erruptive nor was any other aspect of the decorking loud. Just a fiant hissing "pop". It pours an unfiltered strawed skin-tan with only a few off-white bubbles rising and dropping off the surface. Has this specific Tripel been soured? My instinct is telling me that it was indeed: has phenolic aromas, brett, honey, peaches, cashews and whiskey heat on the nose. Much sweeter than I originally anticipated. I get sweet malts, some wine-like funk, oak, peach syrup, acid, and perhaps just the littlest amount of hop bitterness which was low-key and very earthy and floral in taste. This is good but I would like to have tasted more oak; overall this was a thrilling opportunity.
