750 ml caged and corked bottle. Served in a DFH Signature Glass, the beer pours a very cloudy golden/orange color with a huge frothy off-white head. Thereís also a good amount of lacing. The bottle was a slow gusher when it opened, and the head on this brew continued to grow after first pouring it into the glass. It took a little while for the brew to settle down before I started drinking it. Aroma is mostly fruity, the brew smells like pears, peaches, whiskey, peppery spice, honey, and some tropical fruit. It tastes like pears, yeast, peppery spice, whiskey, honey, peaches, and a bit of apple and toasted coconut. The whiskey flavor is quite smooth and works well with this beer. Mouthfeel/body is medium/full, itís a bit slick and syrupy, and it has high but soft carbonation. Itís also easy enough to drink. The barrel aging sure hasnít hurt the Tripel at all. Iím a big fan of the regular Tripel, and I really like this Cask Aged version too! Hopefully Rockmill will decide to make another batch of this sometime in the future.

Sample at Ale Wine & Spirits in Powell on 10/20/2011. Pours a hazy orange-gold color with a medium bubble white head that diminishes steadily. Sticky patches of lacing on the glass. Aroma of oak, yeast, malt and fruit. Full-bodied with a ripe fruity character and a subtle whiskey base. Notes of peppery yeast and malt in the background along with some sweet spice. The finish is well-balanced between oak and fruit. Overall a very enjoyable beer.

This amazing beer pours a cloudy honey golden with a very thick head of off white lace. Nose has hints of oak, whiskey, honey and floral hops. Deep and rich complex flavor that starts out with bourbon like notes, broadening into a more tripel style with decent hops and a slightly sweet middle. Finish is warming, alcohol evident. Toasted oak presence with carmelized sugary honey/brown sugar flavor around the edges. Very deep and complex beer. Very awesome.

Bottle. Poured cloudy golden color with a large frothy off-white head that lasted with excellent lacing. Complex woody, citrus, whiskey and yeast aroma. Medium body with a smooth texture and soft carbonation and thin particles. Medium to heavy whiskey complex flavor with a medium to heavy complex sweet finish of moderate duration with a small alcohol bite. This is a refreshing standout beer.

Huge popping gushing, barely got the cage off before the cork was denting the ceiling! The aroma brings the sweet tripel notes first and then sweet whiskey notes come in somewhat potently. The flavor is similar, but the whiskey comes in quite potently on a champagne like body.

750 mL bottle supplied by Drsilverworm -- many thanks! Consumed alone in front of some dumb Elizabeth Rice movie. Ended up scrapping that idea and drank the remainder of Rockmillís CAT outside on a beautiful 74į F afternoon with my dog by my side. It took a lot of energy to remove the cork, however, but it wasnít erruptive nor was any other aspect of the decorking loud. Just a fiant hissing "pop". It pours an unfiltered strawed skin-tan with only a few off-white bubbles rising and dropping off the surface. Has this specific Tripel been soured? My instinct is telling me that it was indeed: has phenolic aromas, brett, honey, peaches, cashews and whiskey heat on the nose. Much sweeter than I originally anticipated. I get sweet malts, some wine-like funk, oak, peach syrup, acid, and perhaps just the littlest amount of hop bitterness which was low-key and very earthy and floral in taste. This is good but I would like to have tasted more oak; overall this was a thrilling opportunity.

750 ml C&C bottle served in a Portsmouth tulip. Letís hope this tick from Alex (Masterski) is better than the base.
A: Pours a hazy gold peach with a thin white head forming on the pour. It leaves some soapy lace behind.
S: Very fruity esters in the nose and they are very sweet as well, almost like a fruit roll-up. Sweet cherry and heavy whiskey finish out the nose.
T: The whiskey is a touch harsh, but I donít mind it. Itís a little hot, but the sweet caramel flavor from the barrel and the slight yeast counter acts this a little bit. The fruit smells from the nose didnít really transition to the taste.
M: Medium bodied with a creamy mouthfeel and nice carbonation. The finish is a little hot.
O: Much better than the base beer. It still needs some time to mellow, but it was pretty solid.

Poured from a 750 ml bottle into a Rockmill chalice/red wine hybrid glasls. Pours a translucent gold with almost no head to speak of. The aroma is very lightly whisky laden with some sweet, estery undertones sneaking through. The taste is fairly sweet and a little warming on the tongue. The barrel comes through, but not overly abundant. Iím glad I finally got a chance to try this beer. Iíve been after it for awhile.

UPDATED: JUL 19, 2013 Bottle shared by Tmoney99. Pours a cloudy golden color with a large, dense off white head. The aroma has whiskey, oak, yeast, some fruit, citrus, and sweeter light malts. The flavor has oak, whiskey, probably enhances the sweeter malts and fruits, spicy, light peppery notes. Comes off a bit boozy at times. The Rockmill beers have all been solid, but are a bit pricey.
