Pour from a bottle at Rockmill. Pours a hazy, pale yellow-gold with a white head. Super bready and wheaty aroma, with sourdough, lemon, coriander, grass, and straw - big malt in the nose. Flavor of lemon citrus, wheat, florals, and mild spice. Cleaner than the nose. Light-medium bodied, with moderate carbonation and a bready, refreshing mouthfeel. Interesting witbier.

Bootle at home. I’ve never heard of brewery but label looked classy so hoped beer would follow suit. Pours gazed yellow with puffy head. Nose is yeast and spice and citrus. Tastes of lemons, yeast, coriander, cloves, pepper, grass, orange peel, and ginger. Nice mix of flavors and very refreshing. Glad I took the chance since I was too lazy to look up prior.

750 ml bottle from Whole Foods. Nice orange color with a big batch of foam. Coriander and spice. But a really nice yeast profile throughout. Pretty good. Borders saison. Wit flavors play out, though.

C&C 750ml bottle, pours a hazy dark orange gold with a two finger white head and lacing through out the entire glass, looks really nice in the light, aroma has a light hop touch with a good amount of spice and banana at the same time, interesting, the flavor has almost a saison touch to it, dry front end with some spice and fruit in the finish, again the hops show through though, different but pretty solid.

Pours brassy gold with a tall, egg-shell coloured head.
Strong orange and coriander scent.
Wheat malt, orange-peel, spices in flavour.

Bottle. Musty lemon, coriander and wheat malt aroma. Hazy golden yellow with huge fluffy white head. Sweet lemon/orange wheat malt, coriander, light clove, and mildly bitter herbal flavor. Nice body. Excellent.

750 mL bottle, thanks to treebute. Pours a slightly hazy yellow, with a big, foamy, white head. Lots of lemon peel, lactic acid, cardamon, and some damp leaves. Sweet and citrusy, with a significant (for the style) hop bitterness and just a hint of spiciness. Light to medium body, lightly bubbly, and clingy. Overall this is a nice looking, aromatic witbier, but too musty and hoppy for the style. Still, drinks well, and is an pretty nice American Wit.

Guest samples @ Party Town / Florence KY Slightly hazy golden amber with a good 1" head, splashes of lace. Taste is wheat and malt - adds spice in the palate before growing both sour and bitter as it moves to a smooth finish. Not at all what I expected, but once I got my mind around it, it worked. Unique, one at a time would be plenty.

750 ml bottle. Pours a cloudy golden color with a medium sized white head. The aroma and flavor have wheat, pale malts, mildly spicy with coriander and orange peel, light citrus character and a hint of clove. Interesting example, my biggest knock on these guys is the cost of their bottles.

8/06/2011: Rockmill Witbier (Organic Wheat Ale brewed with Spices)... Aroma: Coriander spice, wheat malt, citrus peel. Appearance: Very cloudy, dull golden color with a bubbly off-white head. Flavor: Citrusy wheat with gentle spiciness; a little sharp in the finish. Palate: Medium-light; almost too much carbonation. Overall: Seems a bit more like an American Wheat than a Witbier, but still pretty decent.
